In this post I will be sharing with you how to process and make pap at home. Pap which is also known as akamu or ogi is a popular cereal pudding that is common in Nigeria. Pap can made from different grains or a combination of at least grains such as millet, maize or sorghum.

The one I made is made from millet and maize which is my best combination. I also opt for either corn or millet when I'm tired of my favorite combo. Pap is mostly best enjoyed for breakfast in Nigerian homes with akara, moin-moin, or beans.

The process of making pap at home may seem like a difficult task but you would see that it isn't that stressful if you have done it once or twice and know the right things to do. But, I can boldly tell you that it is time-consuming but it is worth it if you want some healthy pap for your family.

So, let me walk you through the process of processing pap from the scratch and how to prepare it as a meal.

Step by Step

• Start by soaking your maize and millet in a bucket filled with water for about 24 hours to 48 hours.
  

• Then, continue by washing the maize and millet multiple times in multiple clean water. This is to get rid of sand, stones and chaff. Repeat this process until you can't feel any sand in the your millet anymore.
  

• Next, take the washed grains to a grinder who will use industrial grinding machine or you can make use of your blender if it is a high-powered one.

• The grains will be grinded with little water to make it a smooth paste.

• Now, when you're back home, you will begin the sieving process. This is the process of separating the pap from the chaff.

• You will need about three large buckets filled with about 70% of water, and a sieving cloth.
  

• Start by scooping some of the grinded paste into the sieving cloth and use your palm to start squeezing the pap out into the bucket with water.
  

• Once you observe that the chaff in the sieving cloth is dry, dip it into another clean bucket of water to get more pap.

• Repeat the process until you have extracted all the pap and the chaff doesn't contain any pap again.
  

• Then, leave the buckets in a safe place overnight so that the pap can settle at the bottom while the water is above it.
  

• The next step is to carefully pour out the water on top without disturbing the settled pap. Then scoop the pap into a clean container that will be kept in the refrigerator.
  

• We are done with the processing of the pap.

• Now, let's make some pap with some quick steps.
  

• First, scoop the desired amount of pap in a bowl, and stir into a smooth mixture and be sure it doesn't contain any lumps. You can add some cold water to thin it down.
  

• Next, boil some water and pour it slowly into the pap you have mixed while giving it a good stir.

• Your pap will begin to take a thick consistency. It is up to you to decide your desired consistency by adding more water.
  

• Serve your pap and add some milk, sugar or honey.
