In today's Creative Sunday guys I bring to you a meal of fried potatoes with lots of vegetable garnishing. This meal is the kind that does not take too much of our time especially if you love Potatoes like I do.

Sweet Potatoes are considered as root vegetables, rich in calcium that helps us in support of strong bones, although low in protein but still an important source of protein. Sweet Potatoes are an excellent source of beta carotene, vitamins C and potassium. This root vegetable has a lower starch content and caloric density. It's a food you will enjoy in many ways .

I made this healthy meal of fried potatoes vegetable garnishing recipe to share with you all because its a meal we can make when we want to enjoy something spicy that does not take too much of our time to prepare especially if we have the ingredients in our pantry or include them when we go groceries.

Come with friends to see the ingredients used and steps I took to prepare this deliciously appetizing recipe.

INGREDIENTS :

1 medium size tuber of sweet potatoes
1 small size onions
3 balls of tomatoes
2 Red Hot fresh peppers
Few leaves of pumpkin leaf (ugu) (cucurbita maxima, a gourd kind of squash cucurbita)
1/2 teaspoon of curry
1/2 teaspoon of thyme
1 soy cube
Salt to taste

Steps For Preparation :

  • We start by peeling, cuting and slicing our sweet potatoes. Then we wash and slice our pumpkin leaf, chop our tomatoes, the onions and red pepper.

  • Here all the ingredients are ready for preparing this recipe.

  • We then wash the potatoes and salt it a little to taste. Heat the frying pan with shallow oil and start dropping the potatoes. Allow to fry for a while for a golden brown look before we flip it for the other side to fry. Remove

  • We will then fry our vegetables by adding a little oil in another pan. Heat up a little before we add the onions first, add the tomatoes and the red pepper after a while and fry to dry a bit. We then add our spices, the thyme, little salt and the soy cube. Allow to fry for aroma and flavor.

  • The vegetable will be finally added followed by the curry and we set it down after seconds to avoid over cooking the vegetable.

  • And here we are with the yummy but we need some garnishing to give it a creative look it deserves.

Thanks @momogrow for stopping by. Potatoe is a meal I can eat in different ways. I love this root vegetable.
