Healthy and Meaty Vegetable Dish For Lunch Requested By the Oldies

Today is one of those "cheat day" and because it's been a while, Mom requested for Pork Dish for today's lunch. To make it healthier, she also asked me to buy two different kind of vegetable which I will mix with the pork. I'll be the one cooking it so it's depends on me how I will prepare it. And because I want to avoid ingredients which is bad for her like soy sauce, I didn't include that in the ingredients and just use salt instead and some seasonings. But you know, it will taste really good too if it has oyster sauce, but that too is not good for Mom so tinggggg ┐( ̄ヘ ̄)┌, that's a no.

So this is the vegetables I'll be using on this recipe, it's fresh Mustard Greens and Squash. Both are good for the body because of their own health benefits. Mustard greens is rich is vitamins which we really need especially i'm living with the oldies. It is also good for me because it can help boost my immune system. Well, green leafy vegetables really has a lot of health benefits so we tried to eat more of them.

And here's the meat,I just cut them into strip, bite size. I do this because I want it to be cook much faster and I really want my pork meat tender and easy to chew. That's more better for the oldies, although both of them has nicer teeth than mine, still, a tender meat is easier too digest. So I just seasoned it with salt, pepper and some seasonings. I let this rest for a minute before I proceed cleaning and cutting the veggies.

After cleaning the mustard greens, I just them like this and even seperate the stens which is the harder part of it. I want it to cook more so that we can chew them easily too. As for the squash, I just cut them like this, like a bite size as well.

So next it cooking time! I sauteed the onion and garlic with the marinated pork. I leave it for a minute to let the water dry. My reason for that was to give the pork a brown color in it but sadly I didn't achieve that, haha. I just pour cups of water in it and let it boil over low heat. I really want it to be more tender so that's what i'm trying to do

And 50 minutes later, I added the mustard greens stem because this one is the hard part of mustard greens. Although its good to have this half cook, but this time I want it soft and easy to digest as well. We'll cook it for 3 minutes.

After 3 minutes we'll the mix the squash in it and cook it for another minute or until the squash soften.

And lastly, we'll put the mustard greens leaf and cook it for another minute.

And it's done!

Healthy, meaty and an easy to chew dish with Pork, Squash and Mustard Green. I cook it with a little soup in it. I mean, we want our rice a little wet so this kind of dish is really good. And it is actually just Ginisang Baboy with Mustard Greens and Squash. No any special seasonings or ingredients, just the pork and two kinds of vegetables. \(^o^)/
