(ENG-ESP) RECIPE: Delicious lentils with rice and mixed vegetables

- Buenas noches amigos de hivefood, bienvenidos de nuevo a mi blog... A continuación, les explicaré como preparar unas deliciosas, saludables y nutritivas "lentejas con arroz y verduras mixtas". Espero disfruten el "paso a paso" de esta exquisitez!

- INGREDIENTS: red bell pepper, onion, garlic cloves, bay leaf, ripe tomatoes, 1 cup lentils, 1/2 cup rice, black pepper, cumin, extra virgin olive oil, fresh cilantro, cashew nuts for garnish, and salt.
- INGREDIENTES: pimiento rojo, cebolla, dientes de ajo, hoja de laurel, tomates maduros, 1 taza de lentejas, 1/2 taza de arroz, pimienta negra, comino, aceite de oliva virgen extra, cilantro fresco, merey para decorar y sal.



- Add 2 tablespoons of olive oil to a nonstick skillet, sauté the julienned onions and finely chopped garlic cloves. Sauté over medium heat for 5 minutes (season with salt and pepper).
- Incorporamos 2 cucharadas de aceite de oliva a un sartén antiadherente, sofreímos las cebollas cortadas en "julianas" y los dientes de ajo (finamente cortados). Salteamos a fuego "medio" durante 5 minutos (salpimentamos).

- Add the bell pepper, along with the ripe tomatoes (remove the skin and seeds)... Cook until the vegetables soften slightly.
Set aside to use in the final step.
- Añadimos el pimiento, junto con los tomates maduros (extraemos la piel y las semillas)... Cocinamos hasta que las verduras se ablanden un poco.
Reservamos para utilizar en el paso final.



- Add the lentils to a deep pot, cover with water, and cook over medium-high heat until tender.
When the lentils are tender, add the rice along with the water and bay leaf. Add the reserved vegetables (mix well). Season with: black pepper, cumin and salt to taste.
- Integramos las lentejas a una olla honda, colocamos agua hasta cubrirlas, cocinamos a fuego "medio-alto" hasta que se ablanden.
Cuando comprobemos que las lentejas se ablandaron, agregamos el arroz junto con el agua y la hoja de laurel... Integramos las verduras que teníamos reservadas (mezclamos bien). Sazonamos con: pimienta negra, comino y sal al gusto.

- El cilantro fresco aportará un sabor espectacular!
