Today’s lunch was a perfect example of how simple ingredients can create a delicious comforting and satisfying meal. I cooked Malabar spinach known in the Philippines as alugbati and turned it into a flavorful stir fry dish with oyster sauce. To make the meal even more enjoyable i also prepared a batch of crispy fried chicken wings. It didn’t require fancy ingredients just creativity fresh vegetables and the desire to make something tasty for the family..

Malabar spinach is one of my favorite leafy vegetables because of its natural mild flavor tender stems and smooth slightly thick leaves. It’s also packed with nutrients like iron fiber magnesium and vitamins A and C making it a healthy choice for any mealtime. Aside from being nutritious alugbati is very easy to cook. It absorbs flavors very well especially when mixed with garlic onions and sauces like soy sauce or oyster sauce.

For today’s lunch i wanted something light yet flavorful so i decided to make stir fried Malabar spinach with oyster sauce. The cooking process was quick just sautéing garlic and onions, adding the alugbati and letting it simmer with a bit of oyster sauce for added richness. The oyster sauce brought out a savory sweet taste that perfectly balanced the natural freshness of the vegetable. I loved how the garlic added aroma while the alugbati remained vibrant and soft but not mushy. The final dish had a glossy texture and a comforting aroma that instantly made me hungry..

Of course a Filipino meal feels more complete with a bit of protein so i fried some chicken wings to pair with the vegetable dish. There is something about crispy chicken wings that makes any meal extra special. After frying them to a golden brown crunch i paired them with the stir fried alugbati and that combination was absolutely perfect. The crispiness of the chicken and the soft flavorful alugbati created a balance of textures that made every bite enjoyable..

Ingredients for Stir-Fried Malabar Spinach (Alugbati) 🍀🌿

1 bundle Malabar spinach (alugbati), washed and cut

4 cloves garlic, sliced

1 small onion, sliced

1–2 tbsp oyster sauce

1 tbsp cooking oil

Salt and pepper to taste

Optional: sliced tomatoes, a little soy sauce, or chili for added flavor

Procedure 🧑‍🍳

  1. Prepare the alugbati. Wash thoroughly and cut the stems and leaves into manageable sizes.
  1. Heat the pan. Add cooking oil and sauté the garlic until fragrant.
  1. Add the onions. Cook until soft and translucent.
  1. Add the alugbati stems first. They take a little longer to cook than the leaves. Stir for 1–2 minutes.
  1. Add the leaves. Continue sautéing until they start to wilt.
  1. Season with oyster sauce. Mix well so the sauce coats all the vegetables.
  1. Add salt and pepper to adjust the taste.
