Beef tongue is delicious, never tried pork, actually never seen pork tongue sold in our country.
Preparation by boiling is the only way I know, tongue purchased in most our stores is pickled. Keeps well for tasty cold dinners or sandwiches at a later date when refrigerated.
Normally I use mustard, never thought to use balsamic vinegar that sounds delicious!

Pork tongue is much smaller than beef tongue. In addition to mustard, it can be eaten with horseradish. The spiciness of horseradish adds piquancy and emphasizes the taste.
Never tried horseradish, great ideas to remember when next I buy and cook.
Thank you, I sometimes cook from what is in my fridge. This time it turned out delicious.
Maybe I can buy some beef tongue to compare the taste.
Should you see pickled beef it is well worthwhile, only boil cool remove skin and delicious for summer treats one can use in a variety of ways. I too will look out for pork tongue which I have never seen here, I do buy a lot of pork, chicken and ostrich in our country.
