How to prepare crispy fried plantain and spicy scrambled eggs

In this post I will be sharing with you how to make an irresistibly sumptuous crispy fried plantain served alongside some spicy fried eggs. This dish is a quick meal that can be prepared in few minutes and it is packed with flavor and deliciousness. This is one of the meal I enjoy preparing in the house - the feeling of making plantain and eggs is heavenly from the aroma that fills the room and all.
The price of plantain have been on the rise for quite some time now but I think we are beginning to experience a reduction in price in recent weeks as plantain season is gradually starting according to my vendor. Well, that is story for another time.
Let's begin the process of making our perfectly fried plantains and eggs.
Ingredients
4 ripe plantains
6 tomatoes
4 scotch bonnet peppers
1 onion
3 eggs
Seasoning cubes
Salt to taste
Vegetable oil
Step by Step
Start by washing the plantain, then peel and slice into your desired shape and sizes.
In a frying pan placed on medium heat add some vegetable oil and fry the plantain on both sides until they are golden brown.
Your plantain is ready. Set aside.
Now, to start the fried eggs, let's prep all our ingredients.
Wash and slice the tomatoes, scotch bonnet peppers and onions
Next, break the eggs into a bowl and whisk. Set aside.
In a frying pan placed on medium heat add some oil and add the onions.
After about 1 minute of constant stirring add the tomatoes and stir for some minutes as well.
Next, add the scotch bonnet peppers and leave to get done for about 5 minutes on low heat.
Add seasoning cubes and salt at this point.
Next, add the whisked eggs and stir to mix all together.
Let it simmer for some few more minutes before turning off the heat.
Your eggs are ready.
Serve the plantain and eggs. Enjoy hot.
