EASY STEP BY STEP NIGERIAN YAM POTTAGE RECIPE WITH PALM OIL AND WATERLEAF

In this post I will be sharing with you how to make yam pottage which is known as Asaro in Yoruba, Dambu Doya, in Hausa and Ji akwukwo in Igbo. This is a popular delicious dish in Nigeria which offers that reddish creamy feel of boiled yam mashed inside pepper, palm oil and other ingredients. In this recipe I added some waterleaf to add a touch of green fresheness to the meal. This meal is perfect for either breakfast, lunch or dinner.
In making this meal you should ensure you don't mash all the yam, you may mash like 60% and leave the remaining 40% unmashed, so that you can enjoy both the mix of the creamy yam and the solid yam. Also, you must be using an authentic palm oil if you want to get a good yam pottage.
Well, let's leave all the talk for now and get down to business. Let me walk you through the process of making this pot of mouthwatering meal.
Ingredients
1 meduim size tuber of yam
½ cup of palm oil
1 medium sized onions
2 tsp ground pepper
Waterleaf
2 seasoning cubes
1 tsp curry powder
Salt
Step by Step
Start by peeling your yam and slice it into medium sizes. Then rinse it before placing in your pot.
Place the pot with the yam on medium heat and add enough water to cook it and allow the yam to cook until it is soft.
When you have confirmed that the yam is soft, add your grounded pepper and allow to cook for about 5 minutes before tossing in your sliced onions.
Afterwards add your seasoning cubes and salt. The give it a good stir and let everything cook together.
Lastly you will pour your palm oil and stir together. Leave it for about 10 minutes on low heat.
Then use your wooden spoon to mash about 60% of the yam and leave the remaining 40% unmashed. This process is to give your meal a thick flavor-filled base.
Now, add your sliced waterleaf and allow it to simmer for about 2 minutes. Stir well to mix the vegetable with the yam well.
Turn off the heat and your meal ia ready to be served.
You can enjoy this meal on its own or mix with either fish, chicken etc.
