EASY GUIDE TO MOUTHWATERING NIGERIAN PEPPERED CHICKEN RECIPE (WITH TOMATOES, SCOTCH BONNET & ONIONS)

In this post, I will be sharing with you how to make Nigerian peppered chicken which is full of aroma and mouthwatering taste. Peppered chicken is perfect for a Friday or Saturday evening snack in the comfort of your home with some chilled drinks of your choice. The sauce can also go well with some rice and the chicken as a topping. Also, in most parties, Nigerian Owanbe events, peppered chicken is often accompanied with small chops (spring rolls, samosa, puff-puff, meat pie) as a starter.
Ingredients
Chicken
3 to 5 scotch bonnet
4 tomatoes
1 onion
2 seasoning cubes
1 tsp thyme
1 tsp curry
Vegetable oil
Salt
Step by Step
Start the cooking process by washing your chicken thoroughly and cut into your desired sizes.
Next, place in a pot and add some onions, seasoning cubes, thyme, curry and salt. Sprinkle in some water and allow to cook for about 15 minutes on medium heat.
Once the chicken is done, pack them out and allow the water to drain in a sieve. Remember to keep the broth. It will be used in making the sauce.
On a medium heat add some vegetable oil in a frying pan, add the chicken and fry until they are golden brown.
Next, we'd make the peppered sauce. So, we will start by washing our scotch bonnet, tomatoes, and half of the onions (we will slice the rest).
Then blend all together roughly in your blender and set aside.
Place your frying pan on medium heat and add some vegetable oil, add the sliced onions and allow to fry for about 30 seconds. Pour in the blended pepper and tomatoes mix and add your seasonings ( and salt. Fry until it is done.
Ensure you stir at intervals to avoid it from getting burnt.
Now add the fried chicken into the peppered sauce and combine well by ensuring each chicken is well coated with the pepper. Let it sit well in the pepper sauce for some minutes before you turn off the heat.
Your peppered chicken is ready and it can be served hot with some drinks or you can pair it with some rice or even yam.
