Today I will be sharing with you how to make moi moi. Moi Moi, which is known as Bean pudding is a popular food that is made from blending beans into a smooth mixture alongside with other ingredients. The food is a traditional one that has been modernized nowadays and I'm talking in terms of the choice of preparation. Usually this meal is prepared by steaming or boiling but nowadays I see on social media that some online Chefs choose to bake their moi moi in the oven. I haven't tried the baking recipe before but from what I see online it doesn't look like a bad idea.

In order to get the right results you must follow the steps accordingly. However, the steps can be tweaked slightly based on preference and you will still get your desired result. What do I mean by this? For instance, you may decide to use leaves, nylons, aluminium containers or plastic container. From experience, out of all these means of wrapping a moi moi the best ia using leaves.

This food is easy to prepare however the only challenge may be the amount of time that it consumes. The process begins with picking the beans by removing shafts and stones, removing the shafts of the beans, grinding into a smooth mixture, mixing of the ingredients, wrapping in desired wrapper (leaves, nylon, containers etc) and cooking. You'd need a lot of patience to enjoy your moi moi. If you are impatient you may end up eating half done meal that may cause you to purge.

The major ingredients that are used to prepare moi moi includes beans, onions, scotch bonnet, palm oil, seasoning cubes and salt. But if you feel like taking your moi moi game to the next level you can add some other ingredients like egg, fish, crayfish, liver, or gizzards.

Ingredients Needed

  • Beans
  • Onions
  • Scotch bonnet
  • Palm oil
  • Seasoning cubes
  • Salt
  • Nylon

Step by step

  • Using a measuring cup, measure the quantity of beans that you want. Soak the beans in some water for some time so as to make the peeling process seamless.

  • You can peel the beans by rubbing it over your palm to remove the shafts or alternatively you can use the olden days method of using either a mortar or grinding stone to roughly get the shafts out.

  • When you are done peeling, wash the beans to fully remove all shafts the you move to a bowl. In the bowl add some onions, scotch bonnet, crayfish (if applicable).

  • If you're making use of your blender you can blend it smoothly. On the other hand, you can take it to a grinding machine.

  • When the blending process is completed, move to a bowl where the mixing will be done.

  • Inside the bowl add some palm oil, seasoning cubes, salt and other additional ingredients. Stir thoroughly using a spatula or spoon.

  • After the ingredients have been thoroughly mixed together you can begin to scoop into your nylon or leaves or plastic container.

  • Next, place your pot on meduim heat, add some water and begin to place your moi moi in the pot

  • Cook for about 35 minutes and it should be ready when you poke a fork or toothpick through it and it comes out clean.

  • Your moi moi is ready.

  • It can be paired with pap, garri, bread, rice and so on.

Moi moi is one of my favorites and I love eating it with pap or garri. I usually prepare it with small plastic plates.

I doubt anyone will spot a freshly cooked sizzling hot moi moi and wouldn't fall in love with it. I love either pap or garri too - depending on the mood. Haha.
