Baked Coffee Cakes With Easy Ways

Homemade cakes are a great option when you have a sweet tooth. You can adjust the sugar content to your liking.

It was a tough few days on our farm to start our new farming business. As a couple who are not experts in this field and we do everything by ourselves, it made us very tired. But as usual, we always celebrate our tiredness with a hug, and, oh, wait, something delicious to recharge our energy.

My husband and I rarely eat sweet food at home. Only sometimes I make sweet cakes for my nieces on the weekend.

I thought about the stock of chocochips in the kitchen and thought of making a cake. What about the flavor? For now, I don't have bananas, or apples. But, I do have coffee. Hmm, coffee cakes? Sounds a bit unfamiliar because I have never made a cake with coffee flavor.

It seems interesting to try because I love coffee. This time the coffee cakes are very easy to make. We don't need to knead the cake dough or use an electric mixer. For the equipment, we only need to use a spatula, and a hand mixer or whisk balloon.

Of course, you must have an oven because this cake uses the baking method. If you already have an oven, then the rest of the methods of making these cakes are easy.




THE INGREDIENTS

Coffee liquid

  • 2 tablespoons of coffee powder
  • 1 cup of hot water

  • ​​2 1/2 cups of all-purpose flour
  • 1 cup of brown sugar
  • 1 tablespoon of baking powder
  • 1/3 cup of vegetable oil
  • 1/3 cup of plant-based milk, I use coconut milk
  • 1/4 cup of choco chips



COOKING INSTRUCTIONS

Making coffee first. Pour hot water into the coffee powder. Stir well. I also filtered the coffee solution so that no coffee powder would be left in the cake batter.

Prepare a large bowl to mix all the dough. Then, add coffee liquid, brown sugar, vegetable oil, and plant-based milk. Stir them well with just a spatula.

Take a flour sieve. Then, sift the flour and baking powder into a bowl containing the wet ingredients.

After adding the sifted flour and baking powder, then mix slowly using a whisk balloon until they are evenly mixed. Remember, do not over-mix so that the cake will not become hard in texture.

Add choco chips after the dough is mixed evenly. Just slowly and briefly so as not to overmix.

Don't forget to preheat the oven to 170 degrees Celsius. Then, prepare a baking container. I lined the container with baking paper to make it easier to remove the cake from the container later. Transfer the batter to a baking container.

Baking the batter at 170 degrees Celsius for 45-50 minutes. Make sure with a toothpick. If after being poked and the toothpick comes out moist, then the cake is not done yet and you should bake it for another 5 or 10 minutes.

I used a baking time of 50 minutes. Then remove the cake from the baking container. Oh, look at that! It looks nicely risen! Cool the cakes at room temperature before cutting into pieces and serving.

SERVING

Serve coffee cakes with your favorite drink. Honestly, even though it was my first time making this cake, I really liked this cake! Of course, I only ate one piece. The rest were for my husband and my nephews.

The melted chocolate chips in the middle of the cake made this cake really delicious and tempting! Brown sugar gives an extra delicious aroma and brown sugar is indeed very suitable to be combined with coffee.

What a great combination. My husband said I should sell cakes. But I told him that not everything has to be sold, and we have to focus on one thing to be successful.
