Efo Riro -African Vegetable delicacy.

Welcome to another episode of Hive Learner's Creative Sunday initiative with George Dee. As usual, I will share one of my kitchen activities with you.

Today's time in the kitchen is about preparing one of the Nigerian soups, it's a general soup but mostly eaten by the Yoruba. It's one of my favorite soups but I don't prepare it often because of the price of the green vegetables known as Shoko and Tete in Yoruba language. Those two vegetables use to be very cheap but due to inflation, it has become very expensive.

I do use Pumpkin leaves as a replacement for these vegetables but when it has to do with this particular soup, pumpkin can't do the job.


In this post I will share with you how I prepared "Efo Riro" soup, I am sorry I don't have an English name for this soup.

I have a long memory of this soup and it always brings back the memories of my late friend who assisted me in getting all marks in a Home economics practical examination in JSS 2. I was lost in the process of preparing the soup because I didn't know how to cook then, she helped all through. I pray her gentle soul continue to rest in peace.

After I learned how to cook, this soup was one of the soups I was eager to know because it always tastes great when prepared well. It is nutritious, easy to prepare and used for different meals.



Recipe

  • Vegetable


  • Pepper


  • Onions


  • Boiled meat


  • Diced meat


  • Palm oil


  • Seasoning

  • Salt.


Preparation

Before anything, it is important that all our cooking utensils and recipes that are to be rinsed are done properly.

  • Boil some water to rinse the vegetable, it doesn't have to be hot.


  • I heated the pot before turning a small quantity of palm oil into the pot and also allowed the oil to heat.


  • I turned the meat and sliced onions into the hot oil just to fry them for a few minutes under low heat.


  • I turned the blended pepper into the hot oil as well. I added salt and seasoning, and allowed the combo to fry for about 8-10 minutes under low heat.

  • It is important to allow it fry under low heat for a longer time so that the sauce can find its way into the meat.

  • I rinsed the vegetable in cold water and put everything in the fried pepper. I stirred the soup very well and cover it to cook just for two minutes.

  • I hope you remembered that we rinsed it in warm water earlier and cooking too much again will make the vegetable lose its nutrients.


Efo Riro is a nutritious soup, the major recipe is vegetables and we all know that they are a great source of vitamins.

The soup can be served with different meal but I prepared Semovita so that my Efo Riro won't feel bored as it journey to my belly.



Somehow, the soup tasted exactly like mom's cooking and it looks like I did something different which I don't know exactly until I try again and get the same result.

Mr chef, the boss himself... thanks for blessing us with this tutorial. I always admire your kitchen talent. By the way, Efo Riro should have an English name, did u check YouTube? I love all kinds of veggies for soup or stew...nice job here

I checked for the name and it is called Stewed Spinach but the name doesn't give justice to the soup.

It seems like a slightly different recipe to me, but it turns out to be quite tasty. In fact, there is always an attraction to different national recipes. Thanks for sharing.

Our food speaks about our culture and they are unique no matter the tribe or race. It came out delicious and I enjoyed eating it with semo, it seems you have semo at your place as well.
