Mushroom & Tofu Lumpia (Spring Roll)

Hello, everyone! I've read on my previous post, "Holy Week Meals and Desserts", that some still haven't tried making the mushroom and tofu spring roll. The usual filling for spring rolls are pork/beef/chicken and sometimes fish, so let me introduce to you an alternative and something you may add as a variation to your usual lumpia recipe. The Mushroom & Tofu Spring Roll!



MUSHROOM & TOFU SPRING ROLL




Of course, as the title says, our main ingredients for this spring roll recipe are tofu and mushroom. This may be a good option for those who want to lessen their meat consumption and maybe for vegetarians as well, if you know an alternative binder to egg.

When it comes to its taste, I'd say it's not so much different with the lumpia with meat as its ingredient. Just dip it in ketchup or any of your favorite dip and tadah! It's just like pork or beef lumpia!

So let's proceed with the ingredients!



WHAT YOU'LL NEED:



• 2 Blocks of Tofu (Crumbled)
• 1 Whole Carrot (Grated)
• 1 Can or 200g Mushroom (Minced)
• 1 Medium White or Red Onion (Minced)
• 1/4 Cup Onion Leaves (Sliced)
• 53g or 1/3 of 160g Cheddar Cheese (Grated)
• 1 Tbsp All-Purpose Flour
• 1 Whole Egg
• 1/2 Tsp. Salt
• 1/2 Tsp. Black Ground Pepper
• 1 Sachet or 3g Garlic Powder
• Spring Roll (Lumpia) Wrapper
• 1/4 Cup Water



LET'S BEGIN!



#1 Prepare the lumpia or spring roll wrapper by peel or separating the layers. Set aside.





#2 Prepare the ingredients. Mince mushroom and onion, grate carrot and cheese, slice onion leaves, and crumble tofu. If you have a food processor then use it to make this step faster. Use this except for tofu and cheese. I'm lazy to wash our food processor so I opted to only use a grater and knife.







Then put them all in a deep bowl or you can even use a pot just like what I did.





Also, for reference, this is the size of the blocks of tofu.





#3 Add the egg. The egg serves as the binder to keep the mixture from falling apart or crumbling.





#4 Then add salt, pepper, and garlic powder.





I used 1 whole garlic powder sachet of this size.





#5 Mix until all ingredients are combined. For mixing, it is best to use your hands so make sure your hands are clean.





#6 Get your lumpia wrapper and put a teaspoon on it. Roll and seal the edge with water. Just dip your finger in water and spread it on the edge of the wrapper and press it gently to seal it.






There are many ways to roll the lumpia. For me, I put the mixture on one end then roll it once. After that, I fold the sides and continue rolling then damp some water before rolling the edge.

Put the water on a smaller bowl because you won't need a lot anyway.





#7 I believe this can make about 60 lumpia. I was only able to make half (30 pieces) because I already ran out of wrapper. You can choose to fry them right away or you can also store them in the freezer if you're going to consume them later on.





I stored the lumpia I've wrapped into a zip lock before putting it inside the freezer.





#8 For cooking, you can deep fry it or just put enough oil to submerge half of it, but it will take longer to cook because you'll have to flip it and cook each side. You'll know the lumpia is cooked when the wrapper has turned golden brown. Also, don't cook it on high heat or else, you'll burn the wrapper and the filling might end up still raw.





#9 Place the cooked lumpia on paper towel to drain excess oil. Now it's time to eat! Pair it with ketchup and fried rice! Yum!







Guiltless Crunch!





You know, aside from it being meatless and guiltless, it's actually cheaper than using meat. We all know how expensive pork and beef are right now. So here's another way to still enjoy lumpia! Maybe I'll opt for this alternative from now own since I love tofu as well.





I've fried 15 pieces for the first batch and ate 5 pieces each meal. The 30 pieces of lumpia I've wrapped is already equivalent to 6 meals. And when this recipe makes 60 pieces, this means this will cover my 12 meals. Almost two weeks! Ain't that super cheap! If this is just for your own consumption then you might just save a lot. Lol.

Well, enough with the computation. This is a delicious food and a great alternative for meat, contrary to what some people say that tofu tastes bland and weird. Tofu is delicious. Tofu is great!

Thank you! I think we're in the same situation. I've been looking for lumpia wrapper as well few days ago but the stores I've went to have none. I can't wrap the leftover filling. 😅

This is interesting. Tofu and mushroom are great combination, but I haven't try cooking them inspring roll yet. This looks so good and yummy. I should try cooking this in the future.
