The questions @marivic10 brought us for the community contest for week #257 took me back to a time, though difficult, but also wonderful and one of constant growth.
My wife had traveled to #Spain for the first time for her master's degree. It was my first time alone and raising my two children, ages seven and five, without their mother. After lunch, I saw them exchange a glance, and the youngest said, Dad, can we have some dessert?. Of course, it caught me off guard, and I had to tell her there wasn't any and promise her there would be the next day.
I wasn't an expert in the kitchen. My skills were limited to heating pasta and scrambled eggs. The idea of making a dessert from scratch was beyond me, but their hopeful faces were a challenge I couldn't refuse. I searched online for easy homemade desserts and found tons, but none were simple or made with ingredients I could get the next day.
So, in that search, just when I was about to lose hope, easy bread pudding recipe appeared. I chose one that looked pretty straightforward and had good photos.
I took advantage of the kids' time at school and started my work.
Following the steps, I ground the leftover bread. In a large bowl, I mixed the bread with the raisins. In another, I beat the eggs and added the evaporated milk, condensed milk, and vanilla extract.
Pouring the liquid mixture over the bread and stirring everything together was therapeutic.
I then let the mixture sit for a few minutes and then placed it in a pressure cooker over a double boiler.
The next 35 minutes seemed endless. The aroma of vanilla and cinnamon began to fill the kitchen, creating a much-needed sense of warmth. When the timer went off, I released the pressure and nervously opened the pot. I removed the paper covering the pudding and inserted a knife into the center, and it came out clean.
I had done it.
I left it to cool a bit before putting it in the refrigerator and waiting for the kids to come back. They were surprised when, after eating, I told them not to get up, that I had a surprise for them.
I went to the kitchen, cut three pieces of the dessert, and brought them to them.
The contrast between the soft texture of the interior and the slightly caramelized surface was perfect. My oldest son, with his mouth full, said, That's good, Dad, you really put in the effort. That simple compliment was all the reward I needed. There was no magic in what I made; I had just followed a few steps. And, for my first time, it had turned out pretty well.
However, watching them devour the whole dessert with happy faces, that's when I noticed the magic.
I know the recipe by heart because I've made it quite often ever since. Always adding some new ingredient, such as peanuts, raisins and much more.

La preguntas que nos trae @marivic10 para el concurso de la comunidad para la semana #257 me llevó a una época, si bien difícil, también maravillosa y de constante crecimiento.
Mi esposa había viajado por primera vez a #España para la maestría. Era mi primera vez solo y a cargo de mis dos hijos, de siete y cinco años, sin su madre. Después de comer, los vi intercambiar una mirada y la más pequeña me dijo: Papá, ¿podemos comer un postre?. Por supuesto que me tomó desprevenido y tuve que decirle que no había y prometerle que al día siguiente sí habría.
No era un experto en la cocina. Mis habilidades se limitaban a calentar pasta y hacer huevos revueltos. La idea de hacer un postre desde cero me superaba, pero sus caras de esperanza eran un desafío que no podía rechazar. Busqué en internet dulces caseros fáciles de hacer y me salieron muchísimos, pero nada sencillos o de ingredientes que pudiera conseguir el día siguiente.
Así, en esa búsqueda, cuando iba a perder la esperanza, apareció receta de pudín de pan fácil. Elegí una que parecía bastante clara y tenía buenas fotos.
Aproveché que los niños se habían marchado para la escuela y comencé mi labor.
Siguiendo los pasos, trituré el pan que me había sobrado. En un tazón grande, mezclé el pan con las pasas. En otro, batí los huevos y añadí la leche evaporada, la leche condensada y el extracto de vainilla.
Verter la mezcla líquida sobre el pan y revolverlo todo fue un proceso terapéutico.
Entonces dejé reposar la mezcla unos minutos y luego la puse en una olla de presión a baño de María.
Los siguientes 35 minutos se hicieron eternos. El aroma a vainilla y canela empezó a llenar la cocina, creando una sensación de calidez que la casa necesitaba. Cuando sonó el temporizador, dejé escapar la presión y abrí la olla con nerviosismo. Saqué el papel que cubría el pudín e introduje un cuchillo en el centro y salió limpio.
Lo había logrado.
Lo dejé para que se enfriara un poco antes de guardarlo en el refrigerador y esperar a que regresaran los niños. Grande fue su sorpresa cuando al terminar de comer les dije que no se levantaran, que les tenía una sorpresa.
Fui a la cocina, piqué tres porciones del dulce y se las llevé.
El contraste entre la textura suave del interior y la superficie ligeramente caramelizada era perfecto. Mi hijo mayor, con la boca llena, dijo: Está bueno, papá, te esmeraste. En ese simple cumplido encontré toda la recompensa que necesitaba. No había magia alguna en lo que hice, solo había seguido unos pasos. Y, para ser la primera vez, había salido bastante bien.
Sin embargo, al verlos devorar todo el dulce con rostros de felicidad, ahí sí noté la magia existente.
Me sé la receta de memoria porque desde entonces la hago con bastante frecuencia. Siempre agregándole algún ingrediente nuevo, como maní, pasas y mucho más.
