Homemade Burger

Hey guys!

Today, I was craving a burger all day but didn’t want to order one, because who knows what kind of meat they use? Plus, all that bacon and mayo could be a hospital trip waiting to happen. So, I decided to make my own burger and homemade mayo, using the best ingredients I could find and keeping it as healthy as possible (no preservatives here!).

The first thing I did was hunt down a recipe for mayonnaise. I found one but put my own twist on it to make it even better.

Here’s the recipe I used:

2 egg yolks (from fresh, organic eggs)
Salt to taste
Freshly ground black pepper to taste
1 tablespoon Dijon mustard
2-3 tablespoons lemon juice
250 ml olive oil
I swapped the lemon juice for lime because, let’s be honest, everything’s better with lime!

So, I added the eggs, mustard, salt, and pepper to a bowl and started blending with a hand blender, slowly adding the oil. I added a tablespoon of water to get the right texture. Once it was smooth, I added the lime juice and a bit more salt, then blended again. The only downside was that olive oil has a strong taste, which is why most people use sunflower oil for mayo.

  1. The Main Ingredient: The Meat
I bought some Black Angus beef patties, already seasoned with salt and pepper. When you’re working with high-quality meat like this, you don’t need much else. Each burger was about 100 grams.

I heated up a frying pan, melted a bit of Korfu butter (it’s amazing), and cooked the patties. I used parchment paper to press them down and get that “smash burger” effect.

  1. The Bread
You want a fluffy bun for a good burger, so I went with brioche. I melted some butter and toasted the buns until golden.

  2. The Fillings
I kept it simple—just my homemade mayo and a bit of cabbage slaw for crunch.

  3. The Side Dish
For a side, I sliced some potatoes, tossed them with olive oil, and baked them at 200°C. They turned out like crispy fries!

And let me tell you—it was awesome! Sure, it cost more than takeout, but it was worth every cent.

Costs:

Meat: €3
Eggs: €1.5
Bread: €1
Oil: €2.5
Potatoes: €2
Total: €10 (not counting electricity or my time!)

Great recipe mate, simple and delicious, making the mayo sounds like a lot of work. Did you use an electric blender to mix in the oil?

Plus, all that bacon and mayo could be a hospital trip waiting to happen

We have had a real bad experience of kids eating burger and falling ill, because they were not fresh and bacteria develop inside, if they are kept for more than a day. Seems the shop just wanted to sell it's product without thinking about consumer health, home made is always fresh, delicious and awesome.

Yes meat can have a lot of bacteria if the ones making it do not follow standar protocols and those selling it must go out of business!!

There's absolutely nothing as making your own burger. Plus you get to it immediately and add all those ingredients to your taste and not for mass production. The potatoes looks very creamy
