Sublime Sunday and Making Pansit

In one of the comments in a past article, I was asked how I made the Pansit.

Pansit is a Filipino dish which I learned from a mother-in-law of a sorority sister, HERE.

Vermicelli rice noodles are usually used to make pancit. All you need to do is soften them in water. You can substitute udon or chow mein noodles if you don't have any rice noodles on hand.

Although pancit comes in a variety of forms, it always consists of rice noodles and veggies and frequently meat, like chicken or pork, and/or seafood.

Pansit is easy to make.

You can just use cabbage, carrots, onions, garlic and noddles!

For this recipe, I used fish balls and shrimps. And I used any and all of the veggies available in my refrigerator: cabbage, bokchoy,red peppers, caulifnower, zucchini, green beans, carrots, celery, onion, and garlic.

First, sauté the onions and garlic.

Then add the vegetables. I add the carrots, celery, cauliflowers. Next add zucchinis and green beans.

Add the chicken broth next and bring it to a boil.

Once it boils, add the seafood. Cook for 5 minutes.

Taste your cooking!

Add salt (or soy sauce or fish sauce) and pepper, if needed.

Then add the bochoy and red peppers...

... and cabbage. Stir it completely.

Finally, add the noodles!

Cook for a few more minutes, while frequently stirring.

Then it is done!

Serve with lime or lemon. I had left-over fried pork skins or chicharrones. So I crushed it and served that too!

This dish looks delicious, in fact I think that the combination of all those vegetables and shrimp must be delicious, just by looking at the ingredients I can tell that it is easy to prepare.

Omg, now I'm also craving for some Pansit. This is a perfect snack or breakfast paired with some bread. And that Lime is on point, while we used Calamansi 🤤🤤🤤. Another thing is Pansit is always present in every celebration in the Philippines, especially Birthday and Fiesta 🤤😍😍✨. I'm so happy to see that not just us Pilipinos who's loving Pansit 😍✨

Hello sis @ruffatotmeee ! I love Filipino food! I love lechon very much. I can make lechon using the oven, and I have made Lechon Liempo.
I bought a calamasi tree about six month ago HERE, and I was able to use five calamasi for my pansit several months ago.
I lived in Hawaii and very exposed to Filipino cooking, although I learned it only recently.

Oh yes, lechon is super duper the best, ahhh, I miss the crunchy skin of it 🤤🤤🤤 and the juicy meat. Its amazing that you can make that. We never really try making it. More like we don't know how. Lol. Seeing how perfectly it was cooked, the brown skin, my, I can imagine its crispiness 🤤✨. You are so good with it, its not the first time you nake it right? 😲

Seeing how you try Filipino foods even making it at home, it just shows that you also love Filipino foods oh so much 🤩🤩😻

This is the first time I heard the name Pansit. But I think I have tasted some similar dishes in China though I don't know the names quite the same, and it was delicious. Which noodles have you used, seems to be rice noodles or a kind of potato noodles that looks more transparent than the wheat flour noodles.

It is very light! Just load your plate with veggies! The finished product looks complicated but it is very simple to make, as you can see!

I went to Jr. High School on Guam, living there I got introduced to pancit, lechon and lumpia. I have made pancit a few times and eaten it many times although it's been a while now. There are several different ways to make it, I personally prefer Pancit Canton but made with the rice noodles is good also.

The belly I used here came from a young pig! When cooked, the meat separated from the skin. The others I have made are perfect!

Omg. My sister would die if she learns that somebody in the US was able to cook pancit, while us here in PH struggled and wasn't able to cook over the weekend. Lol. She's been craving over the weekend, and we did not have the veggies available at home. Nobody wanted to go and buy the veggies and we ended up not having pancit at all. 😅🤣

Pansit is awesome and one of my favourite dishes to make involving noodles. Although I tend to use leftovers from the fridge than make from scratch.
