Sublime Sunday and A simple French Dish

I love fish dishes!

I always have different kinds of fish in the freezer, and I took out three kinds of fish for this dish.

Cod

Any thin, lean, white-fleshed fish will do for this recipe.

Since I am using a combinations of fish,
instead of Sole Meunière, I call this dish

Poisson Meunière
(Fish with Lemon and Brown Butter Sauce)

My mise en place, which includes all ingredients and supplies organized and ready, are the fish, salt, pepper, flour, butter, chopped fresh parsley, and lemon.



I prepared the fish by first rinsing it well and patting it dry with paper towels. I seasoned the fish with salt and pepper, then coated the fish with flour, shaking off the excess.

I heated olive oil in a large skillet on medium to high heat and then swirled butter until totally melted. Then I added the fish.

I cooked the fish until it was golden brown for 2 to 3 minutes, then carefully turned the fish to cook the other side for 1 to 2 minutes until golden brown, but opaque in the center.

When the fish was cooked, I transferred the fish onto a serving plate, discarded the drippings, and wiped the skillet with paper towels.

Using the same skillet over medium to high heat, I added the butter. Cook the butter until golden brown, about 2 to 3 minutes.

I removed the skillet from the heat and added in the parsley and the juice of a lemon. Then I carefully poured the sauce on the fish. You may spoon the lemon butter sauce if you wish.

Simply garnish with lemon wedges.

You can serve it with bread, rice, or whipped potatoes.

I ate my Poisson Meunière
with boiled Honey Gold Potatoes

buttery sweet flavor with velvety golden flesh and delicate skin.


You don’t need to live near a bistro in Paris to enjoy French cooking. With a little practice, any home cook can utilize French cooking methods. 1

I used to eat that fish fillet battered in egg and also as in your recipe, wrapped in flour. Delicious.

Yes, battered fish, @hylene74 . This recipe has no eggs, or liquid to make into batter. Just plain seasoned flour. Delicious in many ways!

Using Cod would be my favorite fish next to steamed asparagus and rice.
This recipe is a far better option than deep frying.

I buy the fish skinned and filleted. Sometimes it's the whole fillet, other times it is cut into pieces. Most cod dishes use cut portions. I also like stewed fish!

The recipe is simple. We just cook the fish in butter. The fish is seasoned and lightly floured to prevent it from sticking to the skillet. When done, prepare the brown butter, remove from the heat, and add parsley and lemon! Easy-peasy. I love French cooking... romantic!

YES! Who does not know that Italian dish! It's breaded, though, more appropriate for chicken. It is basically made the same, but the sauce is made with broth and wine, of course with lemon and parsley. I'll make it one of these days! French cooking is more refined, I think.
Or perhaps I'll make Petits Gratins de Crabe au Vin Blanc!

It's not really breaded, you use flour then egg wash then cook it like that, no breading on the outside. I have had it with fish, chicken and I worked for a chef before that one of his signature appitizers was artichoke heart Francese, it was very good. !LOL

I am a big fan of different fish dishes - but the rest of the family prefer it battered from the fish and chip shop which kind of looses the healthy appeal!

You will not believe it, I had a similar dish last Saturday at the celebration.
No kidding, it is super delicious. There was nothing left five minutes after the waitress informed the guests that this dish was available.

I also like eating any fish dishes. It's an easy to follow recipe with only few ingredients needed. I like this one coz I can eat it with rice or mashed potato. Definitely delicious!
