Old Fashioned Comfort Food for Sunday: Tomato Chicken Stew

I found myself longing for the familiar, traditional dishes my family enjoyed during my high school years—comfort food crafted from whatever ingredients I could find in the refrigerator.

I enjoy experimenting in the kitchen, but I’m craving something simple and quick to make—I was too hungry to wait!

In the frying pan with oil,
I sauteed the garlic and onions.
Then I added the cut-up chicken...

and followed by chicken seasoning.
I use Knorr Chicken Seasoning!

You can use any poultry herb seasoning or Chicken Dust. I cooked the chicken with the seasoning for around five minutes, giving it time to absorb the seasoning and enhance its flavor.

Then I added the carrot coins.

Potatoes.

And ground pepper.

I cooked it for another three minutes, afterwhich I added 1 teaspoonfull of tomato paste...

... followed cut-up tomatoes.

I gave it a good stir while cooking it for a couple of minutes.

Then I added a cup of water.

Dried basil leaves, because I didn't have fresh ones!

I cooked it for a couple of minutes.

The rest of the vegetables go in: diced green peppers and sliced mushrooms!

I stirred in the vegetables and cooked them for a couple of minutes until it is done.

Didn't know y'all use Knorr Seasoning over there, although in Nigeria it's Knorr Maggi Cubes.😭😭😂😂😂

I know the cubes by Knorr Bouillon Cubes. They come in Beef and Chicken, and enhances the flavor. When ill, it's great as a fulfilling liquid soup. Last year, before my colonoscopy, the doctor's procedures were to drink the bouillon cubes regimen a day before the test.

Different? I think this dish came about because of the ingredients available in Mom's refrigerator. Most chicken stews are made of carrots, celery, potatoes, peas, Italian seasoning, thyme, and bay leaf, using a roux of butter and flour. My recipe above uses tomato paste (or tomato sauce) and tomatoes.

Yes, and yes! I ate it with cottage cheese, as I am reducing my carbohydrate intake. But it is perfect with white rice, or naan, or French bread/rolls. It has been a while since I made bread. The last time was during Christmas, @revolverocelotyt. I should bake some!

Come to think of it, most of the dishes I prepare uses one pan! This recipe is simple, yet a bit unusual. I have not come across the same recipe, sis @joanstewart!

I love one-skillet and pot dishes. Appreciate recipe. Seems like you'd put the bell peppers in earlier to saute.

Yes, you could add the bell peppers to saute (then take it out, to cook the chicken). I like it crunchy, so I cook it in the end with the mushrooms!

My Mom's recipe, @dfinney. The closest one I could find is by TheBetteredBlondie, but does not have mushrooms and bellpeppers. It is simple and delicious!

Some people do not care for tomato-based dishes- well, one of my sorority sisters, that is. If she was visiting, I'd probably revert to the traditional chicken stew that's cooked without tomatoes. But then that is not comfort food to me, @thebighigg, !LOL
