Breaded fish fillets with sweet and sour sauce [en/es]

In the kitchen, improvising with what we have can lead us to create delicious dishes. Today I want to share the recipe for breaded fish fillets (parca), accompanied by a sweet and sour sauce made entirely with ingredients I had at home. There was no soy sauce or cornstarch... but there was honey, tomato puree, vinegar, spices, and lots of inspiration.

The result was a dish with contrasting textures: crispy fillets bathed in a slightly sweet, tangy, and aromatic sauce, with plants grown in my garden (oregano and basil) that enhance the flavor of the fish without hiding it. Perfect for a family dinner, accompanied by white rice, fried plantains, and a fresh salad.

In addition to being tasty, this dish is an example of how flexible cooking can be. Below are the ingredients and preparation process.

En la cocina, improvisar con lo que tenemos puede llevarnos a crear platos deliciosos. Hoy quiero compartir la receta de filetes de pescado empanizados (parca), acompañados de una salsa agridulce hecha completamente con ingredientes que tenía en casa. No llevaba salsa de soya ni maicena... pero sí miel, puré de tomate, vinagre, especias y mucha inspiración.
El resultado fue un plato con texturas contrastantes: filetes crujientes bañados en una salsa ligeramente dulce, ácida y aromática, con plantas de mi huerto (orégano y albahaca) que realzan el sabor del pescado sin ocultarlo. Perfecto para una cena familiar, acompañado de arroz blanco, plátanos fritos y una ensalada fresca.
Además de sabroso, este plato es un ejemplo de la flexibilidad que puede ofrecer la cocina. A continuación, se detallan los ingredientes y el proceso de preparación.

Ingredients

For the breaded fillets:

  • 4 4 fish fillets
  • Salt
  • Pepper to taste
  • 1 cup wheat flour
  • 2 eggs
  • 1 cup breadcrumbs
  • 250 ml vegetable oil

For the sweet and sour sauce:

  • 2 tablespoons tomato puree
  • 1 tablespoon honey
  • 2 tablespoons vinegar
  • 1 tablespoon sugar
  • 1/4 cup water
  • 1 pinch of salt
  • 2 garlic cloves
  • 1 small onion
  • 2 small green peppers
  • Pepper to taste
  • 1 pinch of cumin
  • 1 oregano leaf
  • 1 sprig of basil
  • 1 teaspoon flour (to thicken)
Ingredientes

Para los filetes empanizados:
- 4 filetes de pescado
- Sal
- pimienta
- 1 taza de harina de trigo
- 2 huevos
- 1 taza de pan rallado
- 250 ml de aceite vegetal

Para la salsa agridulce:
- 2 c/ de puré de tomate
- 1 c/ de miel
- 2 c/ de vinagre
- 1 c/ de azúcar
- 1/4 taza de agua
- 1 pizca de sal
- 2 dientes de ajo
- 1 cebolla pequeña
- 2 pimientos verdes
- Pimienta al gusto
- Comino
- 1 hoja de orégano
- 1 ramita de albahaca
- 1 c/ de harina (para espesar)

I started by seasoning the steaks with salt and pepper and reserved them, meanwhile prepare the sweet and sour sauce.

Comencé sazonando los filetes con sal y pimienta y los reservé, mientras tanto preparo la salsa agridulce.

Then I chopped all the vegetables that were going to be used in the sauce, chili peppers, onion, garlic and the oregano leaf from the ground.

Luego corté todas las verduras que usaran en la salsa, ají pimientos, la cebolla, ajo y la hoja de orégano de la tierra.

In a small saucepan, combine the tomato puree, honey, vinegar, sugar, and water. Stir well until everything is combined.

En una ollita pequeña, combine el puré de tomate, la miel, el vinagre, el azúcar y el agua. Revuelva bien hasta que todo esté integrado.

In a pan with a little oil, sauté the garlic, onion, and peppers until tender.

Add them to the pot and add salt, pepper, cumin, oregano, and the basil leaves. Cook over medium heat for about 5 minutes to allow the flavors to blend.

I dissolve the tablespoon of flour in a small bowl of water and slowly add it to the hot mixture, stirring constantly until it thickens slightly.

Once the sauce is finished, I let it cool and then start frying and breading the fish fillets, using wheat flour, the 2 beaten eggs, and bread flour.

Una vez lista la salsa la dejo enfriar y empiezo a freír y empanizar los filetes de pescado, utilizando harina de trigo, los 2 huevos batidos y harina de pan.

I take a frying pan and add oil. When it's hot, I fry the steaks until golden brown and crispy. I place the pieces on absorbent paper.

Tomo una sartén y le echo aceite. Cuando esté caliente, frito los filetes hasta que estén dorados y crujientes. Los coloco sobre papel absorbente.

I serve the breaded steaks on a large plate and put the sweet and sour sauce in a container so everyone can add whatever they want to their steak.

Sirvo los filetes empanizados en un plato grande y pongo la salsa agridulce en un recipiente para que cada uno pueda agregar lo que quiera a su filete.

To enjoy it, I accompany it with white rice, fried plantains, and a fresh bean and cucumber salad.
