Cinnamon rolls [EN/FR]

Hello friends and food lovers! I hope you're all doing well 😁

A while ago, I tried cinnamon cookies and even shared the recipe with you. And this week, I finally got around to trying cinnamon rolls! This cinnamon-flavored brioche roll is a bit of a fall staple 🍂

I thought it would be long and complicated to make, but it's actually quite simple, especially when you have a stand mixer.

Anyway, I'm sure you're also craving delicious cinnamon rolls, so I'm going to share with you the recipe I followed for about ten cinnamon rolls 👇

Ingredients

1 - cinnamon rolls.jpg

For the dough 👇

  • 530 grams of flour;
  • 7 grams of yeast;
  • 30 grams of sugar;
  • 1 pinch of salt;
  • 1 egg;
  • 23 cl of milk;
  • 75 grams of softened butter;

For the filling 👇

  • 90 grams of softened butter;
  • 100 grams of brown sugar;
  • 2 teaspoons of cinnamon.

Preparation steps

To begin, I added a few ingredients to the bowl of a stand mixer 👇

Flour:

Sugar:

1 egg:

Milk:

Then, I started by kneading the dough for 5 minutes (in a stand mixer):

I added the softened butter:

And I let the stand mixer knead for about 15 minutes:

Then, I placed the ball of dough in a bowl and covered it with a clean cloth, then let it rest for 1 hour at room temperature.

For the filling, mix the softened butter with the brown sugar:

And add the cinnamon:

After 1 hour, the dough has risen well. It needs to be deflated by pressing down on it.

Then, I floured the work surface so I could work the dough.

I rolled out the dough with a rolling pin:

And I spread the filling over the entire dough:

Then, I rolled the dough:

And then, I cut it into pieces about 6 cm thick:

I buttered my dish and added the cinnamon rolls:

Then, I covered them with a clean cloth and let them rise for 1 hour.

Once the cinnamon rolls had risen well, I baked them for 25 minutes at 180 degrees Celsius (350 degrees Fahrenheit) with the fan on.

Normally, cinnamon rolls are eaten with vanilla frosting, but I didn't have the ingredients to make it. And in the end, they were delicious just like that.

The brioche was delicious, very soft, and the cinnamon flavor was very present, just right! 😋

What's great is that once you know the recipe for the brioche dough, you can change the filling. Next time, I'll try it with pastry cream and chocolate chips.

In short, another very good dessert/snack, we really enjoyed them! 😁

I hope this recipe has inspired you to make your own cinnamon rolls. It may seem like a long time, but in fact, there's a 2-hour rest period where you can do something else in the meantime!

Il y a quelque temps, j’ai testĂ© les cinnamon cookies et je vous avais mĂȘme partagĂ© la recette. Et cette semaine, j’ai enfin pu tester les cinnamon rolls ! Cette brioche roulĂ©e Ă  la cannelle, un peu emblĂ©matique de l’automne 🍂

Je pensais que c’était long et compliquĂ© Ă  rĂ©aliser, mais finalement, c’est assez simple, surtout lorsqu’on a un robot pĂątissier.

Bref, je suis sĂ»r que vous aussi vous avez envie de manger des dĂ©licieux cinnamon rolls, alors je vais vous partager la recette que j’ai suivi pour une dizaine de cinnamon rolls 👇

Les ingrédients

Pour la pñte 👇

  • 530 grammes de farine ;
  • 7 grammes de levure boulangĂšre ;
  • 30 grammes de sucre ;
  • 1 pincĂ©e de sel ;
  • 1 oeuf ;
  • 23 cl de lait ;
  • 75 grammes de beurre mou ;

Pour la garniture 👇

  • 90 grammes de beurre mou ;
  • 100 grammes de sucre roux ;
  • 2 cuillĂšres Ă  cafĂ© de cannelle.

Les étapes de préparation

Pour commencer, j’ai ajoutĂ© quelques ingrĂ©dients dans le bol du robot 👇

La farine :

Et ensuite, j’ai commencĂ© par pĂ©trir la pĂąte pendant 5 minutes (au robot) :

J’ai ajoutĂ© le beurre mou :

Et j’ai laissĂ© le robot pĂ©trir pendant environ 15 minutes :

Ensuite, j’ai placĂ© la boule de pĂąte dans un saladier et je l’ai recouverte d’un torchon propre, puis j’ai laissĂ© reposer pendant 1h Ă  tempĂ©rature ambiante.

Pour la garniture, il faut mélanger le beurre mou avec le sucre roux :

Et ajouter la cannelle :

Au bout d’1h, la pĂąte a bien gonflĂ©. Il faut la dĂ©gazer en appuyant dessus.

Puis, j’ai farinĂ© le plan de travail pour pouvoir travailler la pĂąte.

J’ai Ă©talĂ© la pĂąte avec un rouleau Ă  pĂątisserie :

Et j’ai Ă©talĂ© la garniture sur l’entiĂšretĂ© de la pĂąte :

Puis, j’ai roulĂ© la pĂąte :

Et ensuite, j’ai dĂ©coupĂ© des morceaux d’environ 6 cm d’épaisseur :

J’ai beurrĂ© mon plat et j’ai ajoutĂ© les cinnamon rolls :

Ensuite, j’ai recouvert d’un torchon propre et j’ai laissĂ© gonflĂ© pendant 1h.

Une fois que les cinnamon rolls ont bien gonflé, je suis passé à la cuisson : 25 minutes à 180 degrés en chaleur tournante.

Et voici le résultat :

Normalement, les cinnamon rolls se mangent avec un glaçage Ă  la vanille, mais je n’avais pas les ingrĂ©dients pour le faire. Et finalement, c’était trĂšs bon comme ça.

La brioche Ă©tait super bonne, bien moelleuse et le goĂ»t de la cannelle Ă©tait bien prĂ©sent, pile comme il faut ! 😋

Ce qui est chouette, c’est qu’une fois qu’on connaĂźt la recette pour la pĂąte Ă  brioche, on peut changer la garniture. La prochaine fois, je vais essayer avec de la crĂšme pĂątissiĂšre et des pĂ©pites de chocolat.

Bref, encore un trĂšs bon dessert / goĂ»ter, on s’est rĂ©galĂ©s ! 😁

J’espĂšre que cette recette vous a donnĂ© envie de faire vos propres cinnamon rolls. Ca peut paraĂźtre long, mais en fait il y a surtout 2h de repos oĂč vous pouvez faire autre chose en attendant !
