Salt with Chives and Lemon zest

I recently prepared a very interesting salt with chives and lemon zest and today I will share the recipe for it.

I collected chives flowers and stems from our garden, which is currently in bloom.

Then I cut the flowers and stems with scissors.

I mixed them with Black Sea salt and added grated lemon zest.

After mixing the three ingredients well, I spread it on a tray covered with baking paper and placed them in the oven for about 30-40 minutes at 150 degrees, stirring occasionally with a wooden spoon and making sure the ingredients do not darken.

After the mixture dried, I ground it in my favorite stone mortar.

I transferred it to suitable containers and now I use the salt to finish dishes and salads - at the end of cooking, to preserve the flavors.

This salt, in addition to giving an interesting taste to dishes, also has a number of beneficial properties. Chives contains folic acid, antioxidants, vitamins K and C and improves digestion and reduces inflammation. Black Sea salt is extremely rich in trace elements, and lemon peel, in turn, improves metabolism and acts antiseptic and antimicrobial.
