The magic of candied citrus peel/ Die Magie der kandierten Zitrusschalen
Hello lovelies, today was a beguilingly fragrant day and I felt like I was at a weekly market in Tuscany - where the scent of exotic fruit blends with the sea air and enlivens the aisles of the market. What a wonderful thought, isn't it?
That's why I'm all the more delighted with my little candied citrus peels, which I made entirely without sugar. LOOL - yes, you read that right! I cooked and rolled them with birch sugar, just to give it a try. Because birch sugar is not only much healthier, it also has fewer calories.
Hallo ihr Lieben, heute war ein betörend duftender Tag, und ich fühlte mich wie auf einem Wochenmarkt in der Toskana – dort, wo sich der Duft von exotischen Früchten mit der Meeresluft vereint und die Gänge des Marktes belebt. Was für ein wundervoller Gedanke, nicht wahr?
Deshalb freue ich mich umso mehr über meine kleinen, kandierten Zitrusschalen, die ich ganz ohne Zucker hergestellt habe. LOOL – ja, richtig gelesen! Ich habe sie mit Birkenzucker gekocht und gewälzt, einfach um es einmal auszuprobieren. Denn Birkenzucker ist nicht nur viel gesünder, sondern hat auch weniger Kalorien.
Candying is a traditional technique that refines fruit by slowly soaking its peel in sugar. As you carefully cut the peel into fine strips, the essential oils are released into the air - a fresh, fruity fragrance that evokes memories of sunny days.
Then it's time to blanch: The peels are briefly soaked in hot water to soften their bitter flavour. After at least three changes of water, they are ready for the next step.
Kandieren ist eine traditionsreiche Technik, die Früchte veredelt, indem ihre Schalen langsam mit Zucker durchtränkt werden. Während du die Schalen sorgfältig in feine Streifen schneidest, entfalten sich die ätherischen Öle in der Luft – ein frischer, fruchtiger Duft, der Erinnerungen an sonnige Tage weckt.
Dann geht es ans Blanchieren: Die Schalen baden kurz in heißem Wasser, um ihre Bitterstoffe zu mildern. Nach mindestens drei Wasserwechseln sind sie bereit für den nächsten Schritt.
Now the real transformation begins. In a heavy pot, you prepare a syrup of sugar and water, which slowly becomes a shiny coating for your citrus peel. The strips slide in and are submerged in the sweet liquid, which changes their texture and gives them an irresistible lustre. You let them simmer patiently - and with every minute the kitchen absorbs more of this intense, caramel-like flavour.
The variety of flavours
The exciting thing is that each citrus fruit brings its own flavour:
- Oranges - fruity and sweet, with a gentle depth.
- Lemons - fresh and invigorating, with a fine acidity.
- Grapefruit - an aromatic surprise, slightly tart and incredibly complex.
Jetzt beginnt die eigentliche Verwandlung. In einem schweren Topf bereitest du einen Sirup aus Zucker und Wasser, der langsam zu einem glänzenden Mantel für deine Zitrusschalen wird. Die Streifen gleiten hinein, tauchen unter in die süße Flüssigkeit, die ihre Textur verändert und ihnen einen unwiderstehlichen Glanz verleiht. Geduldig lässt du sie köcheln – und mit jeder Minute nimmt die Küche mehr von diesem intensiven, karamellartigen Duft auf.
Die Vielfalt der Aromen
Spannend ist, dass jede Zitrusfrucht ihre eigene Note mitbringt:
• Orangen – fruchtig-süß, mit einer sanften Tiefe.
• Zitronen – frisch und belebend, mit einer feinen Säure.
• Grapefruit – eine aromatische Überraschung, leicht herb und unglaublich komplex.
For approx. 5 oranges, 2 lemons and 1 grapefruit, you need 50-100 g of birch sugar.
When the candied citrus peels are finally lifted out of the syrup and laid out on baking paper to dry, they are rolled again in birch sugar. Give it a try - if you love citrus fruits, you simply can't get enough of them.
Für ca. 5 Orangen, 2 Zitronen und 1 Grapefruit benötigt man 50-100 g Birkenzucker.
Wenn die kandierten Zitrusschalen schließlich aus dem Sirup gehoben und zum Trocknen auf Backpapier ausgelegt werden, werden sie erneut in Birkenzucker gewälzt. Probiert es aus - wenn ihr Zitrusfrüchte liebt, könnt ihr einfach nicht genug davon bekommen.

I like taking something healthy without sugar; I hate taking sugar because it is not good for my body system.
You're absolutely right, almost everything is pumped full of sugar. Birch sugar is a good alternative.

That would be nice for a snack sometimes. I haven't known that citrus peel could be candied as well. I though it's just the fruit. 🍊🍊🍊
The fruit is of course the best but the bowl is also a great topping for a dessert or as you said, for snacking.

Ohhh, that looks like a good dessert to have after every meal. And i'm curious about birch sugar, this is actually the first time I heard that. And making this is really easy no, and instead of throwing the oranges peels, we can just make them into a good dessert. ┏(^0^)┛
I try to avoid industrial sugar wherever I can, so birch sugar is a great alternative.
Either way, birch is an absolute miracle tree and not only the sugar but also its sap and young shoots are unbeatable and versatile.
