EASY Eggplant and Scrambled Eggs
I grew up being told that eggplant doesn't contain much nutrition but now that I make my own food, it has become a habit to look up for the nutritional benefits of the fruits and vegetables.
I like eggplant omelette, however, I can't grill eggplants since I've been using electric stove for cooking. This left me with no choice and challenged me to think of other ways to cook eggplant for breakfast.
And I came up with eggplant and scrambled eggs
🍆 Eggplant and Scrambled Eggs 🍳

Eggplant and scrambled eggs is an experimental recipe of mine consisting of chopped eggplants, eggs, cheese, cucumber, and seasoning. I try to avoid making fried eggplants because it absorbs lots of oil so I came up with another recipe which I think is healthier as it is combined with other nutritious foods.
This recipe is very easy to make and is good for two to three servings. Let's begin!
📝 Here's What You'll Need 📝
- 2 Medium Eggplant (Diced)
- 4 Eggs (Whisked)
- 1/4 Cup Cucumber (Diced)
- 2 Tbsp. Cheddar Cheese (Diced)
- Splash of Liquid Seasoning
- 1 Tbsp. Butter

👩🏻🍳 Let's Cook!!!
1.) Start by melting the butter on the pan and sauteing the eggplant. Continue sauteing until eggplant becomes soft or mushy.
2.) Then add a splash of your prefered liquid seasoning. You can also use powdered seasoning if that's what's available for you. Saute for around 30 seconds then push all slices of eggplant to one corner.
3.) Add the whisked egg. Do not mix yet.
4.) While the egg is still liquid, add the cheese. I also added a small slice of butter so the egg would become buttery when cooked (optional).
5.) Begin mixing the egg when it begins to solidify. Keeping mixing until it becomes scrambled egg then add the diced cucumber.
6.) Mix until all ingredients are combined and it's done!
I also cooked hotdogs and fried rice to pair my eggplant and scrambled eggs.

I'd rate this recipe a good 7.5/10. It's good but I think it would taste better when there's tomato in it. It pairs great with the hotdog and fried rice as well. If you're going to store it in the fridge, make sure to consume it within a few days because the cucumber might spoil quickly.
