Dinner Solved: Easy One Pot Salmon & Rice!




Hello! How is everyone? Weather has been cloudy with occasional rain since the other day here in the Philippines signaling the beginning of rainy season. However, the weather agency is yet to announce the official start early next week. It's insane how I was sweating bullets outside last week and then woke up the next day to a bed weather feeling. Finally, we've reached a comfortable weather again.

Doesn't this comfortable weather make us a bit lazy? It's makes us want to stay in bed all day but we all know that's impossible, especially for us who doesn't have anyone to rely on to do the chores for us.

Anyway, don't fret! This lazy girl got you! I'm here to share a very easy yet packed with nutrition one pot rice meal you would surely love!




🐟 One Pot Salmon & Rice 🍚





Salmon is among the healthiest fish as its rich in omega-3 fatty acids, protein, and other essential nutrients. It's often used for sushi, sashimi and either baked, seared, or steamed. It can used for a fancy dish or on a much simple one like a one pot recipe.

One Pot Salmon & Rice is a quick dish to make which makes it very suitable for students or have limited time for cooking because we just throw all the ingredients in the pot and let it cook with the rice. It's almost like making the Powerpuff Girls where their professor just threw all the ingredients in.

Okay, before I ramble more nonsense here, let's get into the ingredients. Let's begin!!!




📝 Here's What You'll Need 📝


  • 1 Cup Uncooked Rice
  • 2 Cups Water
  • 170 to 200 Grams Salmon
  • 1 Tbsp. Soy Sauce
  • 1 Tbsp. Sesame Oil
  • 1 Tbsp. Butter
  • 1/2 Cup Corn Kernels
  • 1/4 Cup Carrots (diced)
  • 1/4 Cup Cheese (diced)
  • Scallions
  • Pinch of Sugar
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Ground Black Pepper
  • Dash of Furikake

OTHER INGREDIENTS:

  • Mayonnaise
  • Nori Sheets




👩🏻‍🍳 Let's Cook!!! 🐟


#1 Place the uncooked rice on the pot or rice cooker pot and wash it three times and add water. (Or you can follow your own measurement in cooking your rice.)

Don't use a strainer when washing rice, okay? Don't be like that one woman Uncle Roger criticized on his video a couple of years ago. Just pour the water into the rice and swirl everything with your hand until the water becomes cloudy. Slant the pot to pour the water out. Repeat that three times until the water is no longer cloudy.





#2 We start with the liquid ingredients. Pour the soy sauce.






#3 Then pour the sesame oil next. I love sesame oil because it gives a fragrant smell to the dish and makes mixing all the ingredients easier.






#4 Then sprinkle the sugar to balance the taste.





#5 We proceed by adding the carrots.





#6 And the corn kernels next. We're basically adding the solid ingredients now. Corn kernels is one of my favorite ingredient for this recipe. It complements well with the taste of salmon.







#7 Of course, the cheese. A rice meal just tastes better when it's cheesy! I remember eating a cheesy tuna melt rice meal from a fast food restaurant back in high school and it's my ultimate favorite I could eat two orders of it in one go. Unfortunately, it was already discontinued.






#8 And finally, we put the star for this dish. I thought it wouldn't fit the pot so I sliced the salmon in half.





This is actually a sashimi salmon, the type of salmon you can eat raw. I think this one is a bit pricier than a regular salmon fish but I have no choice because this was the only type of salmon available at the grocery when I went there.





#9 Cover the pot and cook as you would cook your rice.





For anyone who is clueless on how to cook rice, just bring it to a boil on medium heat. Then before the water overflows, make a little opening so the water doesn't overflow. Wait for the water to get sipped by the rice, then cover the pot again and bring down to low heat for 5 minutes. Then bring down the heat to simmer for another 5 minutes. Turn off heat and put the pot on a coaster and let it rest for 15-20 minutes.







#10 Now that all has been cooked, we can now resume adding the rest of the ingredients. We first add salt and pepper.





#11 Then the furikake. Furikake is a Japanese rice flavored topping. I used a salmon-flavored furikake.





#12 Then I also added some chopped scallion. This is already the bottom part of the scallion, the reason why its color is pale green to white.





#13 And last but not the least, butter! Butter just makes everything taste better! It's better with butter! :)





#14 Then we mix everything together!



Continue mixing until all ingredients have been combined well.








LET'S EAT! 🤤





Scoop some of the salmon rice meal into a bowl and prepare the nori sheets and mayonnaise.

I made the mayonnaise beforehand. You can use your favorite mayonnaise or you can make your own! You can also add sriracha for some spicy kick.





I also don't have the small pack of seaweed so I used the seaweed sheet for sushi and just cut one sheet into 6 pieces.





To eat this dish, just scoop enough amount to your nori sheet and top it with mayo.






Eat it whole just how you would eat a sushi and let the savory flavor dance in your mouth. You can also crush the seaweed and mix it into the rice instead if you're feeling extra lazy. Or you can also eat it without nori. Just scoop enough of the rice meal into your bowl and drizzle some mayo on top!

Whether you are a busy person, health-conscious, or just want a dish that's quick and easy to make without compromising nutrition, a one pot salmon and rice dish is a perfect option. It's so easy that even someone who is just beginning to learn how to cook can definitely make this dish.

I was worried at first this dish would end up tasting bland but I'm surprised the taste just ended up just right. This is only my first time cooking it and it turned out delicious so I can say that it's a very easy recipe anyone can follow. This recipe makes about 4 servings. I wouldn't say it's a budget-meal dish but it's certainly delish!
