Cold Weather? Time to Make Corned Beef and Bokchoy Soup!




Typhoon Mirasol recently made the skies here in the northern islands of the Philippines cloudy. It brought occasional strong rains in our province and cooled down the temperature making it comfortable to slurp some warm soup.

There's a running joke wherein instead of worrying your safety and belongings during a bad weather, Filipinos stock foods for making sopas, bulalo, and other soup dishes. However, while you enjoy your cravings, be mindful of your surroundings and announcements from your local government especially when you reside on a low-lying area, near a body of water, or a landslide prone area.

So yesterday's weather was cool and I still have some leftover bokchoy from the tinola I made last week. I really don't know what to do with the extra bokchoy I have but thank goodness for the cool weather because it reminded me to make a corned beef and bokchoy soup.




🍲 Corned Beef and Bokchoy Soup 🍲





I can't remember the last time I cooked this soup but this always reminds me of my mother as she would occasionally cook this for our dinner. It's a simple soup dish consisting of corned beef, potatoes, and bokchoy. I like this a lot because of the potatoes but I appreciate the bokchoy more now. Whenever I cook, it seems like I can hear my mother reminding me to eat fruits and vegetables.

The ingredients and steps for making this soup dish is very simple so let's begin!




📝 Here's What You'll Need 📝


  • 1 Can or 150g Corned Beef
  • 1 Potato (diced)
  • Bokchoy (chopped into strips)
  • 1 Onion (diced)
  • 2 Cloves Garlic (diced)
  • 1 Tbsp. Fish Sauce
  • 2 to 3 Cups Water
  • 1 Tbsp. Cooking Oil
  • Ground Black Pepper






(Patis is the Filipino word for fish sauce. And yes, that's a honey container reused as a fish sauce dispenser. My mother likes reusing stuff for kitchen and I kept it that way since then.)




👩🏻‍🍳 Let's Cook!!!


1.) Heat the pot and pour the cooking oil. When the oil becomes hot, add the onion and garlic. Saute for a few seconds or until the onion becomes shiny and translucent.





2.) Add the corned beef and mix. Saute for at least 2 minutes.





3.) Then add some ground black pepper and pour the fish sauce. Continue mixing for a few seconds.





4.) Add the potatoes next. Don't forget to drain the water first. I soak the potatoes in water to prevent it from discoloring. Saute for 3 minutes.





5.) Then add the water. Stir before covering the pot with the lid. Let the water boil then check if the potatoes are already soft. Mine took around 15 minutes at medium heat.






6.) Once the potatoes are soft, add the bokchoy. Stir and simmer for 2 minutes. Turn off stove and it's time to eat!

This can actually be considered as a lazy food because it's so easy to make. Perfect for the lazy and cool weather, right? Lol.





I also like pouring it over a bowl of rice and mixing it together. It tastes so much better when mixed with rice and you only need a spoon to eat it unlike when you put it on a plate. Do you make this too?
