Wednesday Walk: Tostada, Tequila, part 2

Mexican food is so widely available that it has been incorporated into national diets across the world. Of course, the meal is frequently modified to suit local tastes, just like with most cuisines. This means that few individuals have truly tried the true authentic Mexican meal!

Tortadas are set to elevate the already delicious and fantastic tortilla to a whole new level. At first, tostadas were a means of revitalizing old and stale tortillas. But they are standard fare these days.

Corn tortillas are deep-fried in oil until crisp and golden. The most popular toppings for tostadas are guacamole and refried beans. Others toppings are cheese, salsa, cilantro, meat, and vegetables.

Pronounced "tuh-staa-duh," a tostada is a crispy, flat tortilla. Tostada is a term that means "toasted." It is used to describe crispy tortillas that have been deep-fried or toasted.

Let us make TOSTADA!

We used refried beans, Machaca, salsa, cut-up lettuce, Mexican crema, shredded Cotija cheese, and a tostada.

I've included a video at the end of this article that shows how to make Machaca or Mexican Style Pot Roast.

First, spread a refried beans on to the tostada.

Dried pinto beans are the foundation of the best refried bean recipe, which is prepared in a slow cooker or an Instant Pot with spices. After cooking, the beans are mashed using an immersion blender or potato masher. This is not always useful and takes a long time.

I use canned refried beans at home all the time. However, I thin out the refried beans (just like below) with either water, chicken or vegetable broth, or milk, or half and half cream and heat it up. Don't use sour cream or buttermilk as it would change the flavor of the refried beans.

Add the machaca, and then the Salsa Rojo.

I've linked a video below on the types of salsa rojo. As for me. I buy my red salsa from the grocery.

Add the chopped lettuce on top

and the Mexican crema.

Sprinkle with shredded Cojita Cheese and top with guacamole.

Wow! That was so easy to make!
And it was DELICIOUS and FRESH!

If there was one take-away that was reinforced in the way I cook,
it is that fresh food ingredients do make a difference.

That looks quite delicious. My wife and I started making our own refried beans several years ago in the Instant Pot. It makes it so easy and they taste so much better than the canned ones. I think it's also healthier for you because you can adjust the fat as much or as little as you want to. We make a batch about once a month and it gives us about a half dozen containers that last us through the month.

I should try making it from scratch once again. The trouble is I live alone. But when I have guests in the future and I intend to serve Mexican, I can do it from scratch!

It's comforting to see a familiar dish here! It's almost like nostalgia... I can't describe the feeling, especially since I don't even like eating tostadas! But thank you for sharing the legacy of my people 🇲🇽
I've heard that California has still not gotten the tortilla exactly right. In my region, we swear by a brand called El Milagro ("the miracle" lol). They are probably best in the US but there are others like Atotonilco that serve more niche purposes like making enchiladas, flautas, etc. I like that video with those three classic and powerful chiles! My favorite is chile tomatillo

Homemade tortillas are the best!
I only know the vague contents of the recipe, but not any of the quantities...
