In a hurry? How about a Mug Cake 😋

Let me show you how to make a Peanut Butter Cocoa Cake... in a mug!

It is homemade, from scratch, it takes only 2 minutes to prep and cook 2 minutes in the microwave.

Deadly, since it is so easy to prepare!

You need a mug and, of course, ingredients, which you most probably already have in your pantry: flour, sugar, baking powder, cocoa powder, peanut butter, vegetable oil, vanilla extract, granola for topping (totally optional) and milk. (Ignore the baked brownies in the photo.)

Let us begin.

4 tablespoons all-purpose flour

2 tablespoons sugar

1/4 teaspoon baking powder

1 tablespoon cocoa powder

1 tablespoon vegetable oil, and 1/4 teaspoon vanilla extract

2 tablespoons peanut butter

1/4 cup milk

Cocoa powder has no sugar, but it is fatty, and clumps will happen. We also have peanut butter, so make sure you mix it thoroughly.

Mix it for a few seconds more to activate the gluten in the flour to create structure so that the cake will hold itself up.

I topped mine with granola.

Put it in the microwave on high for 2 minutes.

VIOLA! A quick dessert.

Mmm... YUM! I paired it with tea.

For this recipe, I used Monkfruit sugar, almond flour, peanut butter, and cocoa. Definitely as healthy as ever!!!

I never tried this from scratch before, although I've seen recipes for them here and there.

I don't know if they still exist or not, but a few years back there was some from .... maybe Duncan Hines. I think there was enough for two or three, but in individual packets. Their lemon cake and glaze wasn't too shabby for something you could do in a cup in just a few minutes and no chance of over eating. LOL

I saw something like this a couple years ago but never tried it. Your post spurred me to action and I made it last night! It was quite easy and tasty, too! It was too hot to eat for almost 30 minutes, though, and I had to wrap a napkin around the mug to be able to hold it 'cause it was still so hot, but it was worth it!
