Healthy Brownies for Wednesday

A brownie recipe is typically made of butter, white sugar, cocoa powder, vanilla extract, all-purpose flour, baking powder, salt and walnut halves.

Instead of the usual ingredients, I used:

Bananas

Mash 3 ripe bananas.

Greek yogurt

Add a cup of Greek yogurt.

Mix well.

Monkfruit Sweetener.

Add 1/4 cup + 2 tablespoons Monkfruit Sweetener.

Monk fruit sweetener is a natural, zero-calorie sweetener. It is high in unique antioxidants called mogrosides, which make it 100–250 times sweeter than regular sugar. Source

Oats

Grind up 2/3 cup oats.

Then add the ground oats to the bowl.

Cocoa powder

Mix in 1/2 cup cocoa powder.

Baking powder

1/4 tsp baking powder

Nuts

I added 1/2 cup cashew nuts because I ran out of walnuts. I ground the cashew nuts.

Dark chocolate chip.

Lastly, I added dark chocolate chips, then mixed it up.

Prepare the brownie pan and bake.

I used an 8" x 8" pan lined with parchment paper. Then pour the batter into the pan. Bake in the preheated oven at 325 degrees Fahrenheit for 35-40 minutes.

When done, cool first before slicing into squares.

The brownie is done when the top is dry and the edges have started to pull away from the sides of the pan.

I've used pumpkin in brownies in the past, but never yoghurt & bananas! Interesting swap! Never heard of Monkfruit, though, not sure if I can find any in the one-horse town I live near, but I'm sure it would be good with the raw, cane sugar I usually use. Thanks for sharing the recipe! 😋

Nope, can't do it. For some reason I am okay with fresh bananas, but I can't handle anything banana flavored. The one exception was a texas sheet cake style cake that was banana and that was pretty dang good, but I think it was mostly due to the frosting!
