Easy Dinner on Sublime Sunday

The green onions and cilantro have a few more days in the refrigerator. I have to use them all up in my cooking.

The easiest way is to make pico de gallo. Pico de gallo is fresh Mexican salsa.

First I diced tomatoes and cut the green onions. I prefer to remove the seeds from the tomatoes, although this is not necessary. And since I have lots of green onions, I used green onions instead of white onions.

I chopped up the cilantro leaves.

Next, I added the diced jalapeño. I also removed the seeds and veins from the jalapeños before dicing them up for a milder pico de gallo; unless you want hot pico de gallo, then you may want to keep it in.

IMG_3839.JPG

Then I put in a teaspoon of salt.

IMG_3840.JPG

Finally, I squeezed a generous half of a lime into the fresh salsa.

IMG_3841.JPG

Then I gently tossed the fresh salsa to mix all ingredients, covered the bowl, and placed it in the refrigerator to allow the flavors to meld.

Tonight, I had fish tacos using the smaller portions of fish. The fish is Alaska pollock battered fillets. I air-fried it for 15 minutes.

IMG_3842.JPG

I used the 8-inch soft tortilla wrap which I heated in the microwave. The two fish fillets fit perfectly! (I was starving at this point)

IMG_3843.JPG

Then I proceeded to complete the taco by first spreading the pico de gallo on top of the fish.

Followed by the Mexican Crema.

IMG_3845.JPG

Mexican crema is the equivalent of American sour cream or French crème fraiche. It is usually served with cheeses like cotija or queso fresco and is a little sweeter and thinner than sour cream.

IMG_3846.JPG

I then grated Cojita cheese on top of the crema.

I also added a bit of cheddar cheese.

You can fold the tortilla whichever way you wish; in this case, I folded it in half.

IMG_3850.JPG

Adding an avocado is perfect. The avocado was small. I don't know what variety it was.

IMG_3851.JPG

Cut the avocado in half and squeeze the meat out.

IMG_3852.JPG

And top it with pico de gallo.

I eventually filled my fish taco with the avocado and pico de gallo.

The fish taco was so satisfyingly G O O D!

The way you presented the wrap itself is tempting. The fish wrap sounds so interesting. I had fish wrap last, while I was working in themiddle east. Enjoy fooding.

I am salivating in food heaven just looking at that! I love Mexican food, and that is all kind of awesome. That looks amazing @silversaver888 , now I want some really good fish tacos. Fortunately living in Cali there are lots of good places around!

Looks and sounds tasty although I've never had a fish taco! Your salsa is similar to the kind I make, but I use tomatillos instead of jalapeños. I also use green fire roasted chilies which adds a bit of zing depending on the fire rating the the chilies.

Thanks for sharing sis; now I'm hungry, !LOLZ Take care always sis! Much !LUV to you!🤗💜🌹😍😘 !LADY
