Easter Celebration for Sublime Sunday

Happy Easter!

I was so busy at work the days leading to Easter Sunday, and with many activities in our church, I hardly have time for food preparation.

I did grill some meat (Grilled Pork with Salt and Pepper).

When it was done, I sliced it up...

Herbed Zucchini and Steamed Beans with Garlic for sides.

A friend from the Bay Area brought Jollibee Fried Chicken, a brand we had not tried before. It was yummy!

Then I ordered the rest of the food from a Chinese restaurant!

Beef Chow Fun

Beef chow fun is a Cantonese dish made by stir-frying beef with bean sprouts, ginger, scallions, and dark soy sauce. The broad rice noodles are called he fen or huo fun. Places that serve dim sum or occasionally roast beef will have this dish.

Shrimp Fried Rice

Salt Pepper Fish

Crispy golden fried fish bits combined with garlic, chilies, green onions, and other seasonings make up this irresistible Chinese salt and pepper fish recipe. They are really good, Have you tried this one?

Walnut Shrimps

I took the photo before I could mix the sauce. This Chinese dish is popular among my friends. It is tasty and full of flavors. The sauce is made with Sweetened Condensed Milk, Mayonnaise, Lemon Juice, and Lime Juice.

I also served the appetizers, dessert, and wine. Unfortunately, I was too busy to take photos, but I did take a photo of my plate.

On Easter Sunday, a lot of Christians go to special church services. Jesus Christ's resurrection is commemorated throughout these services.

We had the kids of my friends look for hidden eggs, which are frequently stocked with little toys or candies. The egg represents rebirth and new life.

So many people were attending Easter Church service, we saw friends that we hadn’t seen in a long time!

Honey glazed Ham at my home with Yams at my home. My kids said to me not to bother with the Chocolate eggs this year.

Looks like you had a lovely time! The food looks tasty!

Our Easter was quiet. We went to church (I went to the Good Friday service without hubby as he was too sick to go unfortunately). Both services were special and awesome.

Awww... I hope he is totally well now!
Holy Week and Easter were non-stop busy, but I enjoyed it. I wasn't able to take the time off because we are busy at work too. Maybe next year, I'll take vacation days.

You are killing me, with all that yummy grub!! Looks like you had a wonderful Easter weekend. Since I have been in a wheelchair since December, I just chilled out and watched the grandkids hunt for Easter Eggs (plastic ones mind you... no stinky accidents lol). But we had a great time, and we were together. That's what really matters after all... right?

With our kids and even our grandkids grown or living far away, we no longer enjoy the traditions we once did, like candy-filled Easter baskets, or dying and hiding eggs for the kids to hunt. This year we focused more on church. My wife didn't even decorate the house.

It seems the only thing you could call an Easter tradition for us now is watching The Passion of the Christ on Good Friday, along with fasting and abstinence. We went to the Oblate of San Antonio on Holy Thursday, where they have a large reproduction of the Lourdes Grotto and the Tepeyac of Guadalupe. We were able to spend some time in adoration at the chapel there. We attended Good Friday services, and then stopped to eat at Red Lobster on the way home. Apparently Good Friday is their busiest day. After Easter Sunday mass, we went to a niece's house to celebrate two birthdays and a young lady becoming Catholic through RCIA at the Easter Vigil the night before.

I attended the Tridium Masses and services. The Catholic Church is rich in tradition, and gives all of us the opportunity to live Holy Week well! And the Easter celebrations are unparalleled. Accepting the new members of the church through RCIA is very moving. We had so many baptisms and first communions!!!

That's great! It's always difficult to tell, with all the C&E Catholics attending Easter services, but I feel like the Church is growing, and that truly is a beautiful thing.

You feel it too? Since last year, we have had so many adults and converts joining in! It is not true that evil has taken over the world—not in my experience anyway. BEAUTIFUL!

My wife and I attend a diocesan Latin Mass in San Antonio, so attendance at our mass has grown as other Texas Bishops (in Corpus Christi, and more recently in Austin) have banned the Traditional Mass (due to the Pope's motu proprio - Custodes Traditiones), and "trads" have started making the drive to San Antonio. That said, the church is filled with crying babies...the future! If your church isn't crying, it's dying. If you are so inclined, consider signing the petition to Bishop Vasquez asking for restoration of the traditional mass at the Cathedral in Austin, Texas, or at least keep those faithful in your prayers. I need to add you to my daily prayer intentions too, my friend. Keep the Faith!
