A Sublime and Beautiful Sunday: Jerky, Rose, Shadow, Dragonfly, and Pouched Chicken
The days are just running into each other! It's Sunday again!
Sunday is a wonderful day to "rest" I start my Sunday by going to Mass! A sublime and beautiful day indeed!
Along with the #1Hex bar and surprise gift coins that I received from @silverd510, he also sent me
"Dave's Ultimate Prime Rib".
Oh, my! The smell is heavenly!
It is indeed ULTIMATE! It is a salty-sweet, smoky jerky with a chewy yet tender texture. It is totally fat-less (because it does not dry out and accelerates spoilage). The spiciness is not overpowering! What a delight to have! I wonder if he will share his recipe.
Did I tell you that he is also a Chef! Last Christmas, he sent me the best truffles I have ever tasted! Seriously!!!
These are very creamy sweet treats with a gourmet reputation: Chocolate Caramel Truffles.
@silverd510 is Italian. I don't know if it has any bearing on his being a great cook. Did you know that he also makes a killer Osso Buco?

At this time of the year, when the leaves start to change color, the temperature drops, and the days get shorter... I seldom come across insects in the backyard.
Insects can withstand cold weather best under conditions that are steady and do not fluctuate with many freezes and thaws, like California weather. They either hibernate, or diapause (a state of suspended development), or migrate.
Insect diapause is a lot like hibernation, but there are some differences. The main difference is that mammals remain active until winter is well established and temperatures are frigid, but insects that enter diapause become dormant in the autumn well before it gets too cold for them to function. Another difference is that mammals can sometimes rouse themselves for short periods of activity during the winter, but once an insect enters diapause, it will remain dormant until spring, even though the weather might be suitable for normal growth and development.1

I pouched chicken thighs. This time, I deboned it for a shorter cooking time. I made my usual dip of oil wiht ginger, green onions, and salt.

I’m glad you like it. It’s taken me years to tweak and perfect my jerky no recipe or process will be shared. But I’ll share any other cooking recipes. Just not jerky, it’s not just the seasoning but how you process the meat .

It has the right spiciness! I slice it about 1/2 x 1/2 inches and it is perfect with Bourbon. Just pop the whole thing in your mouth!
I use a single piece of Habanero in my jerky, and the rest of the ingredients are the usual ingredients (salt, sugar, black pepper, garlic powder, onion powder, and soy sauce). I will have to discover the secret to it, hehehe!

Mine is a pretty complex process. Using the right cut of meat is the key. The one you have doesn’t have any hot peppers at all just cracked peppercorns. It’s just like the seasoning for prime rib. What’s crazy is I gave so much away I’m almost out myself now…..

I use only 1 cut of beef, the eye of the round. And I slice it in the opposite direction of the grain. I have not tried other cuts. My friends use either sirloin or flank steak. Do you know there was a time that it was so cool to be chewing on jerky? We went through a phase, hehehe!
