A Simple Recipe for Curried Chicken

Cooking curry can seem complex because it often involves a mix of detailed steps and various ingredients.

Curries typically require a variety of spices, herbs, vegetables, and sometimes proteins. Balancing these elements is essential for the dish's flavor.

Unlike simpler dishes, curries are all about building layers of flavor. This can involve toasting spices, sautéing aromatics like onions, garlic, and ginger, and simmering the curry to meld all the flavors together.

Cooking curry often involves multiple techniques such as frying, simmering, and sometimes even grinding your own spices. Each step is important to achieve the right texture and depth of flavor.

The process can be time-consuming, as some curries need to be cooked slowly to develop their rich flavors fully.

Today I will cook chicken curry the easy way using these ingredients:

  • garlic
  • onions
  • ginger
  • bell pepper (any)
  • jalapeno (optional)
  • carrots
  • chicken
  • salt
  • curry seasoning
  • cooking oil
  • just a little water or broth

You may add potatoes too. I'm avoiding it this time because it is a starchy vegetable.

Procedure:

1. Salt the chicken, then fry skin side down. Fry it for 5 minutes or until cooked on this side, then turn to the other side and cook 4 minutes more.

2. In the meantime: mince the garlic, slice the ginger and onions, chop the bell peppers, and slice the carrots.

3. When the chicken is brown on both sides, add the ginger, onions, and garlic. After a minute, add the carrots.

4. Add water or broth, just enough to cook braise the vegetables.

Just this much water.

5. Add the curry powder

and mix.

6. Cover the skillet and simmer for about 15 minutes.

7. Then add the bell peppers (and jalapeno peppers), and mix.

8. Cook until the bell peppers are done,

About 2 minutes.

9. Transfer it to a plate, and your ready to eat!

You may serve it with rice or bread!

I am sure you would like Indian chicken curry. Though cooking is same but we don't use to fry them in begining...when it cones to curries, I think nothing could beat Indian dishes.

I like the flavor of Indian Curry. But I don't particularly care for chicken skin when it is "mushy, soft", that is why I fry (not just brown) the chicken skin. You are right, Indian curries are the best!

I also learned a while back @silversaver888, that ginger is also very beneficial if you are fighting acid reflux. I have found that they have Ginger chew candies that can stop acid reflux and it tracks!😇😀

I envy anyone who can cook. I can't cook, I don't enjoy it. I eat healthiest at work. I'm a teacher.

My country is a superpower in school food. Every school has a kitchen for students and staff. I eat cheap, healthy and tasty during the working day.

But on other days, I eat all kinds of food. And it shows, especially in my health. At almost 60, I have no desire to learn to cook.

It has a perfect color, looks really tasty. The preparation is not that hard so its easy to follow. I also like the veggies used in it. I think this is perfect too with rice. 🤤

I just love currie. May have to throw a hint at it for dinner meal soon. We usually get kits with everything already mixed. Kind of a instant deal. Not near as good as a regular cooked currie.

I've never had proper curry. I think the thing that turns me off is the fear that it is going to be much too spicy for me. That and the coconut milk that they use a lot of times in it. I don't like coconut, so I wouldn't be able to handle that if the flavor doesn't cook off.

Not all curries are super spicy, and you can definitely find some that are milder and still packed with flavor. As for the coconut milk, there are plenty of curry recipes that don't use it at all, like the one above, so you can avoid that flavor if it's not your thing. Maybe you could try a mild, coconut-free curry sometime and see if you like it. The nice thing about the seasoning mix is you can put as little or as much as you want!😊

We used to have a Thai restaurant in town that had some really good looking curry's. I kept saying I needed to try one, but the pad thai always won out. Sadly, they are now closed and I will never get the chance.

An Asian styled Curry Chicken on rice is a regular favorite in my home, leaving out the Jalapeno of course.
