They say that plans rarely survive first contact with the enemy. Related to that is Mike Tyson's saying, "Everybody has a plan until they get punched in the mouth."

From experience, I can tell you that plans are generally about putting the pieces in place to guide events towards a desired result. Often, how you get them is not exactly as planned.
