I think what happens with normal mode is that the image sensor detects that the environment is dark so it will compensate by having a longer exposure to increase general brightness. Long exposures allow more light, but will be sensitive to slight movement which is why the images aren't as sharp (unless you use a tripod).

So when the user chooses Night mode, it sends a signal to the image sensor that it's "alright" for the environment to be dark, just need to focus on the subject.
