Hello coffee friends. Once again I join this social space...
If I had to choose, it would definitely be bitter. In fact, when I stopped using sugar in coffee, more than three years ago, I felt that the bitter taste did not displease me as I heard others who had eliminated sugar comment.
In fact, that bitter taste that I can still feel today is what I like about coffee, because it gives it a presence on the palate that is undoubtedly very authentic.

The palate gets used to what we teach it to eat and drink, we program our minds through the stages of life, so that things that we did not like before, at another time we got a taste for them.

Balanced bitterness is always preferred in the coffee and everywhere in general. It gives some sort of complexity to the drink. When it is too much, then it is not okay.

I know several people who also drink it bitter, my husband is one of them. I still haven't adapted to drinking it bitter at all, although I agree with you that the sugar masks the taste.

You have to give yourself time for changes...and also for, after making them, to say "I don't want this." It's the right of coffee connoisseurs.

I did have a hard time trying to adapt to plain coffee for the first couple of weeks, and then one day, I started feeling the natural sweetness of coffee along with other notes I had never felt before. Then I knew I was never going back to adding sugar 😌

Agree, that is correct approach and more authentic way to enjoy coffee. I know about myself I am doing it wrong xD But I can say that I stopped adding sugar to my tea 15 years ago, and enjoy tea in most correct way! ☘️
Excellent... I am not much of a tea drinker; however, I also enjoy it when I do. Herbal infusions are more common, also without sugar.
