This is my very first post on this wonderful platform, and I’m excited to be here. I'm stepping in on behalf of @hive.samadi’s husband, who usually shares delicious food content here. However, due to the arrival of their adorable newborn, he’s taking a little break from posting. So until he returns, I’ll be sharing with you instead.

Since we’re in the midst of a festive season here in Sri Lanka, I thought of preparing a dish that’s both luxurious and close to our hearts — Cashew Curry. This beloved Sri Lankan delicacy is often reserved for special occasions and celebrations. With its rich texture, the creamy bite of cashews, and the way it beautifully absorbs spices, cashew curry brings a comforting depth to any meal. Whether served with rice, string hoppers, or roti, it never fails to impress.

Today, I’ll be sharing how to make a flavorful and nutritious cashew curry using simple ingredients from your own kitchen, enhanced by the perfect blend of coconut milk and spices. Let’s bring the taste of celebration into your home!

Ingredients...

⭐️ Between 50-60 cashew nuts.
⭐️ 1 Cup of cocoanut milk.
⭐️ Some finely chopped onion.
⭐️ About 3 finely chopped green chilies.
⭐️ About 3 cloves of garlic, finely chopped.
⭐️ 3 cinnamon sticks.
⭐️ curry leaves.
⭐️ 12 Pandan.
⭐️ About 2 cloves.
⭐️ 2 cinnamon sticks.
⭐️ 1 Teaspoon of curry powder.
⭐️ 1 Teaspoon of turmeric powder.
⭐️ 1/4 teaspoon of Fenugreek.
⭐️ Salt as needed.
⭐️ 2 Tablespoon of coconut oil.

The order of preparation.

First, carefully slice the cashew nuts in a way that preserves their milky texture, then soak them in hot water for about 10 minutes to help remove the skins.
After that, it becomes easier to remove the skins. Gently peel off the skins in this way.

Next, finely chop salt, green chilies, and garlic, and keep them aside.

Now, take a cooking pot and add about two tablespoons of coconut oil. Place it over the heat. Once the oil is heated, add mustard seeds. Then add onions, cinnamon, curry leaves, shallots, garlic, pandan leaves, and green chilies. Mix well. Next, add turmeric powder, curry powder, salt, and fenugreek seeds. Allow it to cook for a little while until the spices are well blended.

Next, add the cashew nuts and mix well. Then, add a little coconut milk and cook for about 5 minutes. Finally, remove from heat.
