For dinner this evening, I prepared a flavorful and nutritious kantola curry to accompany our rice meal. Known locally as kekiri or karawila, kantola is a seasonal vegetable that is not only unique in texture but also packed with nutrients.
Though kantola can be a bit pricey, it’s a wholesome choice for family meals. Its soft yet slightly firm texture absorbs spices beautifully, making it ideal for creating a healthy and aromatic curry. Rich in fiber, antioxidants, and vitamins, kantola is a perfect addition to a balanced diet.
I'm delighted to share this simple yet delicious kantola curry recipe that celebrates both taste and nutrition.
Ingredients...
⭐️ Cantola 200g.
⭐️ Curry leaves.
⭐️ About 2 cloves of garlic.
⭐️ About 3 green chilies.
⭐️ About 2 pieces of cinnamon.
⭐️ 2 Pandan.
⭐️ A small onion.
⭐️ 1 1/2 cup of coconut milk.
⭐️ 1/4 teaspoon of Fenugreek seed.
⭐️ 1/2 Teaspoon of turmeric powder.
⭐️ Salt as needed.
⭐️ 1 Teaspoon of curry powder.
⭐️ 1/2 Teaspoon of Mustard Powder.
⭐️ 1 Teaspoon of Chili powder.
⭐️ 2 Tablespoon of coconut oil.
The order of preparation.
First, finely slice the onions, garlic, and green chilies. Next, wash the cantola thoroughly and cut it into small, thin, lengthwise pieces.
Next, place the sliced kantola pieces into a cooking bowl. Add chili powder, turmeric powder, mustard powder, and curry powder. Mix everything well and set it aside.
Next, take the same cooking pan and add about two tablespoons of coconut oil. Place it on the stove. Once the oil is heated, add fenugreek seeds, fresh green chilies, pandan leaves, curry leaves, chopped garlic, and cinnamon. Let them sauté until fragrant.
Next, add the chopped Cantola pieces to the pan and cook for about 2 minutes. Then, pour in the coconut milk, mix well, and let it cook for another 4 minutes. Finally, remove from the heat.
This delicious Cantola curry is a heartwarming blend of nutrition and authentic Sri Lankan flavors. Whether served with warm rice or a piece of roti, it makes for a wholesome and satisfying meal.
