As I started to read, I thought 'jeez, what do you do with tarragon except tarragon vinegar?' - the one reason I dont grow it. Surely there's other uses for it? But then, it is quite nice....
I asked chat gpt, and it seems creamy kinda dishes suit best. This one sounded nice -
Tarragon Potato Salad - Mix Greek yogurt or crème fraîche with mustard, chopped tarragon, salt, and pepper.
But also a gratin with tarragon sounded good too.

Hahaha! Yes, it's underrated and a key ingredient of Dijon mustard. If you're a carnivore or pescatarian, it's good with chicken or fish. In this country, tarragon vinegar is hard to find, so when I can, I will make it for myself, and sell it at the market.
Oh, and French onion soup is not quite the same without tarragon, especially if you make a vegan version.
BTW, did you see the white rafters?
Now I have cravings for French onion soup with tarragon....
