Ingredientes:

  • Tomates picados

Paso 1: Preparar Acha

Paso 2: Preparar verduras

  • No cocinar demasiado las verduras, ya que agregan frescura y nutrientes.

  • Si no tienes Acha, también puedes usar sémola de maíz. Funciona perfectamente también.

Hubby had been craving this traditional dish for a while, so I decided to surprise him with a delicious homemade version. I'm excited to share the recipe with my Hive family!

Gwaté, also known as Paté, is a savory porridge made with corn grits or Acha (Fonio/Hungry Rice) and loaded with various vegetables. My mum's advice? "Add a little bit of everything!" This dish is a staple in many Nigerian households, especially in the North and I'm happy to share my take on it.

Here's what I used:

  • Acha (Fonio/Hungry Rice)
  • Diced tomatoes
  • Spring onion
  • Onion
  • Pepper
  • Spinach
  • Yakuwa (sorrel leaves)
  • Meat
  • Carrots
  • Cabbage
  • Seasoning
  • Roughly crushed peanuts

Step 1: Prepare Acha

Wash the Acha thoroughly to remove sand. This is an important step, as Acha can be quite gritty.

Step 2: Prep Veggies

Wash and chop the veggies. I like to use a variety of colors to make the dish visually appealing.

Step 3: Cook

Boil 1 liter of water, add a little vegetable oil, peanuts, then peppers, and simmer for 2 minutes. Add Acha, stirring constantly to avoid lumps. Add seasoning and salt to taste.

Step 4: Add Meat and Veggies.

When sixty percent cooked, add cooked meat. Once cooked, add fresh veggies, stir, serve and enjoy!

Tips:

  • Babysit the porridge by stirring it occasionally to avoid lumps.
  • Don't overcook the veggies, they add freshness and nutrition.
  • Use a variety of vegetables to make the dish more interesting.
  • If you don't have acha, you can also use corn grits. It works perfectly as well.

Gwaté is a nutritious dish that's packed with fiber, vitamins, and minerals. Acha is a good source of carbohydrate, while the veggies add antioxidants and fiber.
