So today I will be making a simple, crispy, and delicious breakfast which I called mashed plantain with egg. Lol the name must be making someone laugh already well, creating my food is what I love so let's get into the kitchen and see how I create a yummy, crispy and delicious breakfast.

Ingredients are:

2 piece of plantain

1 piece of egg

300ml of groundnut oil

3 tablespoon of flour

Procedure

As you all can see, these ingredients are common in every home, so I have some leftover ingredients and decided to create something different with them.

Let's get to the process already....

I poured water into a clean pot and then put it on the burner while I proceeded by peeling off the plantain back and then packing them inside.

I made use of not-too-ripe plantains because I don't want them to scatter by the time I want to mash them.

So I let it boil for five minutes so that it could be soft to mash, after that I packed them from the hot.

I placed one of them on a flat plate, then made use of a pestle to mashed it to be flat.

The next thing I did was broke the egg inside a clean plate, then made use of a tablespoon to whisk it thoroughly and then set it aside.

I placed a frying pan on the burner, and then poured the groundnut oil inside and allowed it to get hot a little bit.

While the oil was getting hot, I placed the mashed plantain inside the egg and rolled it inside.

Then I transferred it into the flour, and I also rolled it inside.

I put it inside the hot oil and then fry it on a low heat so that it won't get burnt before I finish with the remaining plantain.

The same process was applied to the rest of the plantain.

Two minutes later, I turned them to the other side.

I packed them out of the oil when they had turned golden brown.

My yummy, crispy mashed plantain with egg is ready for breakfast. You can have it with sauce, but I prefer mine just like that.

I hope you like my recipe for today; don't forget to drop a comment.

I love plantain, but I tend to go for the ripe ones more. However, this coated one looks amazing:)

I prefer ripe plantain too and coating it is not a bad idea. It makes it tastier and more enjoyable.

My, that looks super crispy! I like it! We have a different version if this but without egg. And we cut the banana into four so that it will be crunchier. Now I am craving for it 🤤🤤
