Canelones Night || Noche de Canelones [ENG/ESP]
Yesterday I decided to make cannelloni for dinner, a recipe that fills me with memories and aromas of home.
I started by preparing the filling. I sautéed fresh spinach with a little onion and garlic, then mixed it with ricotta and seasonings. While I let the mixture cool, I prepared the doughs one by one. I like to make them homemade, thin and very soft, just as my grandmother taught me.
Once the doughs were ready, I sat at the table and began patiently assembling them. Each one has its fair share of filling, tightly rolled. The aroma of the spinach and cheese already promised a spectacular dinner.
Meanwhile, I had the sauce on the stove. A good stew with meat, bacon, and some secret seasonings. I let it cook slowly, bubbling, until the kitchen was filled with that aroma that whets anyone's appetite.
Finally, I arranged the cannelloni on trays, covered them with the hot sauce, and left them ready to be grilled in the oven. Seeing them like this, lined up and covered in that sauce, gave me a feeling of total satisfaction.
Ayer decidí preparar canelones para la cena, una receta que me llena de recuerdos y aromas caseros.
Empecé preparando el relleno. Salteé espinaca fresca con un poco de cebolla y ajo, y luego la mezclé con ricota y condimentos. Mientras dejaba enfriar la mezcla, fui preparando las masas una a una. Me gusta hacerlas caseras, finitas y bien suaves, como me enseñó mi abuela.
Una vez listas las masas, me senté en la mesa y comencé a armarlos con paciencia. Cada uno lleva su porción justa de relleno, bien enrollado. El aroma de la espinaca y el queso ya prometía una cena espectacular.
Mientras tanto, tenía en el fuego la salsa. Un buen tuco con carne, panceta, y algunos condimentos secretos. Dejé que se cocinara lento, burbujeando, hasta que la cocina se llenó de ese olor que abre el apetito a cualquiera.
Finalmente, acomodé los canelones en bandejas, los cubrí con la salsa caliente y los dejé listos para gratinar al horno. Verlos así, alineados y bañados en esa salsa, me dio una sensación de satisfacción total.
