Here, eggplants are vegetables that we can eat all year round. Some households grow them as kitchen garden vegetables. As for my house, we’ve planted four trees, but they haven’t borne fruit yet. Most of the eggplants I use for cooking are bought from the local market or given by relatives from the neighboring village.

Eggplants come in many varieties.The one I have is Makheua Pro (Thai round eggplant/Thai eggplant). Its distinct features are its small size sweet and crisp texture. It is commonly used in Thai dishes such as sour curry (Gaeng Som), spicy stir-fry (Pad Ped), or as a side dish. Today, I made it into a soup and enjoyed it as part of my lunch.

Thai round eggplant Soup is a flavorful and comforting dish with a mild spicy kick from herbs and seasonings. It’s often served hot and is packed with nutritious ingredients.

Ingredients & Condiments



Main Ingredients

  • Thai round eggplants 200g
  • Water 2-3 cups
  • Red chilies (adjust to spice preference)
  • garlic 2-3 cloves
  • shallots 1-2 bulbs
  • Lemongrass 1-2 stalks

  • มะเขือเปราะ 200 กรัม
  • น้ำเปล่า 2-3 ถ้วย
  • พริกสด
  • กระเทียม 2-3 กลีบ
  • หอมแดง 1-2 หัว
  • ตะไคร้ 1-2 ต้น

Seasonings

  • Fish sauce 1-2 tbsp
  • Lime juice or tamarind paste 1 tbsp (for a tangy touch)
  • Palm sugar or white sugar 1 tsp

เครื่องปรุงรส

  • น้ำปลา 1-2 ช้อนโต๊ะ​
  • น้ำมะนาวหรือน้ำมะขาม 1 ช้อนโต๊ะ​
  • น้ำตาลปี๊บหรือน้ำตาลทราย 1 ช้อนชา​

Preparation


  • Preparing Eggplants > Wash the eggplants thoroughly and cut them into bite-sized pieces. Soak them in lightly salted water to prevent discoloration, which can make them look unappetizing.

เตรียมมะเขือ > ล้างมะเขือให้สะอาด หั่นเป็นชิ้นพอดีคำ นำไปแช่ในน้ำที่ผสมเกลือเล็กน้อย เพื่อไม่ให้มะเขือเปลี่ยนเป็นสีดำ จะทำให้ดูไม่น่ารับประทาน


  • Shallots > Peeled, washed, and sliced.

  • Fresh red chilies > wash thoroughly and chopped into small pieces

  • Garlic > Peeled, washed, and sliced.

  • Lemongrass > wash thoroughly, Bruised (lightly crushed to release flavor) and cut into small pieces.

หอมแดง, กระเทียม, พริกสด, ตะไคร้ > ปอกเปลือกและล้างให้สะอาด ซับให้แห้ง นำหอมแดงและกระเทียมมาหั่นสไลด์, พริกสดหั่นเป็นชิ้นเล็กๆ, ตะไคร้ทุบพอบุบแล้วหั่นเป็นท่อนเล็กๆ พักไว้


Instructions


Making Soup

  • Boil the broth > Pour water into a pot and bring to a boil over medium heat. Add lemongrass and shallots to infuse aroma.

ต้มน้ำซุป > เทน้ำใส่หม้อ ตั้งไฟกลาง ใส่ตะไคร้ และหอมแดงลงไปต้มให้หอม


  • Season > Flavor with fish sauce, sugar, and lime juice. Adjust to taste. Wait for the broth to boil.

ปรุงด้วยน้ำปลา, น้ำตาล และน้ำมะนาว ชิมรสตามชอบ รอน้ำซุปเดือด


  • Add vegetables > Put in the eggplants and boil until tender, being careful not to overcook them.

ใส่มะเขือลงไปต้มจนนุ่ม ระวังอย่าให้เละเกินไป


  • Enhance the aroma > Add chopped garlic and red chilies. Simmer briefly. Taste and adjust seasoning if needed, then turn off the heat.

เพิ่มความหอม > ใส่กระเทียมและพริกขี้หนูสับ ต้มต่อสักครู่ ชิมรสชาติอีกครั้ง ได้รสตามชอบแล้วปืดเตา


Serve 🍽️


  • Ladle into a bowl and enjoy hot with steamed rice.

Same here, eggplants are grown any time of the year so they are common, and so we can enjoy cooking different eggplant dishes. I haven't seen this variety of eggplant here; I saw this type of eggplant in social media and it is eaten raw. I think it's good to have this soup especially when one is not feeling well. Above all, this one looks nutritious.

That Thai eggplant soup looks delicious, I've never seen round eggplants where I live so they're a little strange to me hahaha. The salt water trick is clever because when I cook eggplant it turns brown no matter what I do, mixing lemongrass shallots and chili peppers must give it a nice flavor without having to use any very special ingredients, lately I've been trying to eat lighter and I think recipes like this could help me achieve that.

Wow! Indeed, healthy and delicious! I also cook soups, but most of the time, I do tempering, especially if it's not a sour soup. I'm amazed you didn't use oil here, it's healthier than tempering spices before adding water.

Also, I am fascinated by the variety of eggplant you used for this soup. I have seen them in pictures, but I have never eaten this variety before.
