Here, one of the most popular dishes at seafood restaurants or seafood stalls is Thalay Dong (Pickled Seafood). It involves marinating various types of seafood in a seasoned soy sauce mixture, with each shop having its own unique recipe. This dish is a favorite for many!
Today, I'll show you how to make a Goong Dong (Pickled Shrimp) a simple recipe with minimal ingredients!.
- Preparation Time : 10 minutes
- Cooking Time : 15 minutes

Ingredients and Condiments
Fresh shrimp 300 grams
Japanese soy sauce 200 ml
Soda water 200 ml
White sesame 1 tbsp
Fresh chili 3 pieces
Garlic 2 tbsp
Procedure
- Making the Marinating Sauce > Simmer the sauce for Korean soy sauce-marinated shrimp by adding soy sauce, fish sauce, water, and granulated sugar to a pot. Heat over low heat until it boils. Once boiling, remove from heat and let it cool.
- Preparing Garlic and Fresh Chili > Peel the garlic, then rinse it along with the fresh chili. Pat them dry and chop into small pieces. Set aside.
- Preparing and Soaking the Shrimp
- The most important aspect of this dish is the shrimp. The shrimp must be fresh and thoroughly cleaned by removing the shell, head, and tail. Take out the black vein along the back, then rinse with saltwater and clean water several times. Drain well.
- Soak the peeled shrimp in soda water for about 5 minutes to achieve a crisp texture.
- Marinating the Shrimp in Soy Sauce
- Arrange the prepared shrimp in a container.
- Pour the cooled soy sauce mixture over the shrimp until fully submerged.
- Add white sesame seeds, garlic, and fresh chili as prepared.
- Refrigerate for 2-3 hours.
Serve
- Perfect as a side dish, appetizer, or paired with steamed rice and fresh vegetables to balance the flavors. Or dip it in spicy seafood sauce for a delicious and zesty flavor

- Savory & Well-Balanced from Japanese soy sauce (rich and umami, less salty than regular soy sauce).
- Mild Spiciness from fresh chili for a subtle kick.
- Fragrant Garlic & Nutty Sesame. Adds depth and aroma to the dish.
- Fresh & Bouncy Shrimp. The shrimp remains crisp, tender, and absorbs the soy marinade beautifully, complemented by its natural sweetness.
Additional Notes:
For best results, marinate the shrimp for at least 2–3 hours or overnight to let the flavors fully develop.
If you prefer less saltiness, reduce the soy sauce and add a bit more sugar or mirin for sweetness.
Garnish with extra sesame seeds or sliced green onions before serving for an extra touch.
