Sausages Day + Día de los Embutidos [Eng+Spa]

I am finishing a Sunday that has passed at a good pace. My #life has been calm, and the only interesting thing is that I helped my brother a little to finish a repair that we had pending on the main water pipe of the house. Everything is ready, most of the work was done by my brother, he just needed a little help for some final details.

Well, there is nothing more to tell about my personal life, so I can go on to comment on an anniversary of #History that I read in today's list, and that caught my attention because I thought it was succulent. It is a celebration of #food, and it is a very ancient meat preparation. This March 3 is 'Sausages Day'.

Estoy terminando un domingo que ha transcurrido a buen ritmo. Mi #vida ha estado tranquila, y lo único interesante es que ayudé un poco a mi hermano a terminar una reparación que teníamos pendiente en la tubería de agua principal de la casa. Ya todo está listo, la mayor parte del trabajo lo hizo mi hermano, solamente le hacía falta un poco de ayuda para unos detalles finales.

Bien, no hay más que contar de mi vida personal, así que puedo pasar a comentar sobre una efeméride de la #Historia que leí en el listado de hoy, y que me llamó la atención porque me pareció suculenta. Es una celebración de #comida, y es una preparación de #carne muy antigua. Este 3 de marzo es el ‘Día de los Embutidos’.

I guess I can start with a generic explanation of what a #sausage is. It is understood as a piece of preserved food, made up of minced meat, mixed with spices and seasoning, inside a tubular container, which can be an animal gut or a synthetic cover. Traditionally, domestic animal casing, whether pig or another type, is used, but 'synthetic casings' may have a lower cost and some other advantages. This procedure of putting the meat mixture into a casing is called 'embuchado' and is the reason it is designated in Spanish as 'Embutido'.

The historical origin of this meat preparation is quite ancient. I have references, through personal or family memories, of sausage traditions from Spain, Portugal, Italy, France, and the countries that these countries colonized during the 16th to 19th centuries. This includes, of course, my country: Venezuela.

But, the origin of sausages lies much further back in history, long before the appearance of these Nation-States. There is archaeological evidence that, five hundred thousand years ago (500,000) BC, there were meat smoking procedures for preserving and cooking. Although that is not yet a sausage, it is the first evidence of work to preserve #meat.

Supongo que puedo comenzar con una explicación genérica de lo que es un #embutido. Se entiende como una pieza de conserva de alimentos, conformada por carne picada, mezclada con especies y condimento, dentro de un contenedor tubular, que puede ser tripa de un animal o ser una cubierta sintética. Tradicionalmente, se usa la tripa de animal doméstico, ya sea de cerdo o de otro tipo, pero las ‘tripas sintéticas’ pueden presentar un menor costo y algunas otras ventajas. Ese procedimiento de meter la mezcla de carne en una tripa, se le llama ‘embuchado’ y es la razón de que se le designe como embutido.

El origen histórico de esta preparación de carne es bastante antigua. Tengo referencias, por memorias personales o familiares, de tradiciones de embutidos de España, Portugal, Italia, Francia, y de los países que estos países colonizaron durante los siglos XVI al XIX. Esto incluye, claro está, a mi país: Venezuela.

Pero, el origen de los embutidos está mucho más atrás en la historia, mucho antes de la aparición de estos Estados-Naciones. Hay evidencias arqueológicas de que, hace quinientos mil años (500000) a.C, había procedimientos de ahumado de carne para su conserva y cocción. Aunque eso no es aún un embutido, es la primera evidencia del trabajo para conservar carne.

Much later, already in pre-Hellenic times, the empires of Egypt, the Assyrians, and others, used salt and spices to prepare meats that were then smoked. This is much more similar to the sausages we know, since there are references that in some cases casings were used for preparation. This would be around the 3rd century BC.

With the rise of Greek civilization, and its subsequent conquest by Rome, we finally have recipes that are properly sausages. So it is a food born in the Mediterranean, and that had an obvious usefulness, both for preserving meat, and for being able to take advantage of meat trimmings that remained after more sumptuous preparations.

The Roman Empire spread its gastronomy throughout much of Europe, and this is how sausages arrived in Spain. Centuries later, with the Conquest and colonization of America, these meat products arrived to these lands.

Mucho tiempo después, ya en épocas prehelénicas, Los imperios de Egipto, los Asirios, y otros más, empleaban sal y especies, para preparar carnes que eran luego ahumadas. Esto ya se asemeja mucho más a los embutidos que conocemos, pues hay referencias de que en algunos casos se usaban tripas para la preparación. Esto sería cerca del siglo III a.C.

Con el auge de la civilización griega, y la posterior conquista de esta por Roma, es que por fin tenemos recetas que son propiamente embutidos. Así que es una comida nacida en el Mediterráneo, y que tenía una evidente utilidad, tanto para la conservación de la carne, como para poder aprovechar recortes de carne que quedaban luego de preparaciones más suntuosas.

El Imperio Romano propagó su gastronomía por buena parte de Europa, y así es como llegan los embutidos a España. Siglos Después, con la Conquista y colonización de América, estos productos de carne llegaron a estas tierras.

It is a long story. And I admit that it is a story that makes me hungry (personal smile), you have no idea how sorry I am to know that excessive consumption of sausages is associated with a notable increase in the risk of developing cancer. It's like the old saying goes: 'It seems that everything tasty is either illegal, or immoral, or bad for your health.'

Although I am one of those who think that it is the exaggeration that causes the problem. After all, it is a preserved meat preparation that has been with us for many centuries, so if it were so decisively lethal, the peoples who have consumed it for centuries (in moderation in their diet) would have become extinct.

Well, I suppose it will always be good to consult a specialist to find out if our particular case has any strong restrictions, or if we can occasionally consume some sausages.

I think I have shared what I wanted to tell you, so I say goodbye, wishing you that you are well and that we can read again another time.

Es una larga historia. Y admito que es una historia que me da apetito (sonrisa personal), no tienes idea de como lamento saber que el consumo excesivo de embutidos se asocia con un incremento notable del riesgo de desarrollar cáncer. Es como dice un viejo refrán: ‘Pareciera que todo lo sabroso, o es ilegal, o inmoral, o es malo para la salud’.

Aunque soy de los que piensan que es la exageración la que causa el problema. Después de todo, es una preparación de conserva de carne que nos ha acompañado durante muchos siglos, así que si fuera tan determinantemente letal, ya los pueblos que la consumen desde hace siglos (con moderación en su dieta) se habrían extinguido.

Bien, supongo que siempre será bueno consultar a un especialista para saber si nuestro caso particular tiene alguna fuerte restricción, o si podemos consumir ocasionalmente algún embutido.

Sí, todo se puede consumir con moderación, durante cientos o miles de años algunos alimentos fueron algo común. En estos días hay campañas contra de muchos alimentos comunes.

Soy partidario de que la exageración siempre causa problemas.

Y es cierto que hay campañas llamativas en contra de alimentos y comidas que eran bastante populares, en algunos casos, mezclada con teorías de la conspiración que me resultan bien raras.
