Exciting times watching seedlings burst out from soil!
Well the thing with seedlings in my experience is you never know what will come up when you do a whole heap like this. In a way it's part of the fun!
I would dare say the lack of drainage in your pot with the onions and broccoli is causing too much moisture (as you indicated) which might drown the early seedlings roots breaking from the seed. I know I've had this problem myself. Mushrooms gorwing instead probably indicates too much stagnation and fungus building up which also poses a threat to seedlings if they are prone to becoming diseased from bacteria build up.
Might I suggest drill a few holes in the bottom, getting a flat tray underneath to allow any drainage from watering to help you. You might also have to turf the soil and start again as it has probably made the soil too unhospitable for seeds from the bacteria and mositure. That's of course if you want to try again and not see how the mushrooms grow. lol
