There is no more joy than growing your own food in your own garden, and especially when it happens in surprise. A year and a half back when I started setting up my garden, I had planted many plants and ginger was one of them. After that some of the plants grew very well and some did not, and ginger did not grow at all, I thought it was a waste. Ginger is a root herb and grows inside the soil and when it grows, the leaves spur up on the top. There were no leaves that had come up No leaves had come up; my understanding was that there was nothing growing inside. Then a few days before I left from India, I was working on my garden and shuffling some pots in which there were no plants and one of them was this.

When I removed all the soil from the pot, I could see some roots and felt some lumps in the soil. On taking a proper look, I could see it was all ginger. First it was not clear to me, I checked with my gardener and he confirmed. Trust me, I was so overjoyed, it was a surprise and there were so many of them. Ginger is something I use daily in my herbal tea and also in all the food preparations and this was a 15 days stock for me and from my own garden.

It needs a good wash before I can use, so I soaked it in water for a couple of hours and then rinsed it thoroughly.

It's clean enough to be used

Using ginger in daily food has many health benefits. I find it the best immunity booster. For me, it's a daily affair with ginger. I have replanted some of the roots, so let's see if it again grows or not.
