Spice Up Your Weeknight: Easy Chicken Madras Recipe with a Twist!

Today I want to share this fantastic Chicken Madras recipe I've prepared.
A dish that is full of brilliant flavors and nutritious vegetables.
This recipe is ideal for those busy days.
And it is so yummy that your family members ask for it over and over again.

Preparation Time: 20-25 Minutes
Serves: 2 starved kids and one mom.
What you'll need:
- 500g Chicken Fillet, cubed
- 2 tablespoons Sunflower Oil
- Vegetables about 400g, I chose:

🥗 Sweet potato
🥗 Cauliflower
🥗 Red onion
🥗 Yellow bell pepper
🥗 Butternut squash
🥗 Spinach
- Madras Herb Paste (adjust to your spice preference)
- 150 ml Coconut Milk
- 100 ml Water
- 200g Rice
- Water for boiling rice
Optional: Cashew Nuts, Lime wedges
Let's get cooking!
Step 1: Perfectly Fluffy Rice
Put lots of boiling water in a pan.
Add the rice and cook for roughly fifteen minutes, or until soft.
Drain the rice and return it to the pan.
Cover with the lid to keep it warm and tender some more.

Step 2: Searing the Chicken

Add the cubed chicken fillet and brown for roughly six minutes, checking both sides are done.
Step 3: Veggie Power!
Over high heat, stir-fry for six to eight minutes to let the veggies soften somewhat and absorb the tastes of the chicken.

Step 4: Creamy Coconut Goodness
Pour in the coconut milk and one hundred millilitre of water.


Incorporate the Madras herb paste.
Stir thoroughly so the paste coats the chicken and vegetables.
The smells will be amazing!


Bring the mixture constantly stirred to a boil.
Reduce the heat then to low, cover the pan, and let it simmer for five to eight minutes.
Be sure to add the spinach only the last minute. Swirl around until it wilts and shrinks a little bit.

Step 5: Serve and Enjoy!
Present the Chicken Madras beside the prepared rice.
Toss chopped cashew nuts with fresh lime juice for a finishing touch.

Vegetarian Twist:

For a fantastic meat-free alternative, replace the chicken fillet strips with 500g of vegetarian chicken pieces.
Advice and Tools:
To fit your taste in spices, change the Madras herb paste quantity.
Sauté some onions and garlic first then add the chicken for a deeper taste.
The spinach should wither fast; avoid overdone it.
Cooking the vegetables with a bit of salt and pepper will help to improve their tastes.
At the end, add a tablespoon of cream for a further creamy sauce.
