Preparing my delicacy... Loh # 271.

When it comes to eating food or preparing food, I never get tired. Starting from the actual market runs to get the necessary ingredients and then to preparing every ingredient own to the cooking proper, I am always ready, alert and available but I am not a foodie by the way (wink).

So far I'm a lover of starchy foods especially rice. I like eating rice in all its various delicacies but the one that stands out for me is Coconut rice. This meal involves a lot of strength, time and attention put into preparing it but trust me, the result at the end is simply delicious.

There are various recipes and cooking styles of preparing this food but I found a recipe some years ago and since then, that recipe is what I use to make coconut rice.

For the record, I don't prepare this meal as often as I would like to because of the stress and time consumption involved. But when I do get around to preparing this food, it always feels worthwhile.

The ingredients I use for cooking are simple and easily accessible at a nearby mall or superstore. Here's my list below;

#1. 2 coconuts.

#2. 1 tin of coconut milk extract.

#3. 6 pieces of carrots.

#4. Green peas, runner beans, spring onions.

#5. 1 large onion bulb.

#6. Vegetable oil

#7. Water

#8. Protein of choice.

#9. Seasonings and red bell peppers.

#10. Salt.

#11. Per boiled rice.

Method of preparation

I start by breaking open the coconuts and peeling out the fleshy part into a clean bowl. Then I blend the washed coconut flesh into a creamy paste with an electric blender. After that, I sieve out the paste so that what remains is a smooth paste.

After that, I wash and per-boil the rice and when it's half done, I set it aside in a sieve. Next I start to get my already chopped onions, pepper, dry fish, crayfish, shrimp, carrot and other veggies. Then I add my beef stock water along with the coconut milk and extract into the pot to boil.

When it comes to a boil, I pour in the pee boiled rice, add my seasonings and some salt to taste before allowing the food to cook on medium heat.

After some minutes, I check on the food to see if it's properly cooked to my preference and when I find it is cooked well, I switch off the gas and serve myself a delicious plate of coconut rice.

I love preparing this meal a lot. The stress involved does not bother me because I know that the outcome will well be worth it. Afterall, there is a saying of ”no pain, no gain” in my society.

Coconut rice is a great treat for me because it has a unique taste of its own that sets it apart from other rice delicacies. The power ingredient for me would be the use of fresh coconut fruits.

I see a lot of milk extracts and creams but nothing beats having fresh coconut milk extracted to prepare this delicacy and with this, I pen down to go attend to my rumbling stomach 😁.

This well looks like a long, serious process. But the result is something that will take you out of this world.😁
I'll need this as a tutorial when I'd like to dare myself. Hopefully, it comes out well. If not, I'll convert it to something salad or something else. Lol.

My husband often makes coconut rice, but he makes it as a dessert. It's a delicious option when it's slightly sweet.

I haven't Coconut rice in a while, now I'm craving coconut rice. 😋
Sometimes when I look at the process involved, I just give up. 😅

Same here but it helps to have a pre planned schedule.

Sometimes, I could decide to prepare it on a particular family member's birthday. This gives me enough time to prepare and also helps my mind adjust to the process.

The process is now easier with blender to blend the coconut instead of manual grating.
