Gluten free chocolate chip oatmeal cookies

Everyone loves a freshly baked chocolate chip cookie or two. . Or do you call them bisquits? What are your favorites?

I remember back in the days when flying was fun. Midwest Airlines was my favorite Airline for domestic flights, partly because during the flight they baked chocolate chip cookies and the whole plane would smell wonderfully! Then they would come through and give everyone two, still warm from the oven, cookies with a beverage of your choice. But those days are in the past and only a memory now.

I love how delicious my house smells when I'm baking.

COOK TIME:
10minutes minutes

SERVINGS:
30 cookies

½ c unsalted butter, one stick, softened to room temperature
½ sugar
½ c light brown sugar, packed
1 ¾ c almond flour (168 g)
½ tsp sea salt
¾ tsp baking soda
1 large egg
1 tsp vanilla
1½ c gluten free rolled oats
1 ½ c dark chocolate chips or chunks, about 2 cups if adding chips on top.

Cream the butter and sugars together

add in the egg and vanilla, My eggs were small so I used 2.

Chop nuts if you plan to add them.

then add the almond flour and the chips and oats.

Bake for 10 minutes

And enjoy with a cup of refreshing tea made with fresh mint leaves.

These cookies are perfection, the best: -apart from the chocolate- for everyone's taste, without a doubt a delicious snack with few ingredients.
With tea they make an excellent combination.

Yes, indeed. My son should be on a gluten-free diet, but he loves to eat bread. We all enjoy gluten in our family! 🤣

My wife makes cookies similar to these 😋 I still go for a plain old tollhouse chocolate ship cookie as my favorite. Crazy about Midwest baking cookies in-flight 😂 beats the smell of disinfectant heavy in the air as you board post Covid 🙄

I like toll house best too! Midwest was a great little airline and I always enjoyed flying out of Milwaukee.

These cookies are very tempting... I like to bake a chocolate cake but it's been a long time since I've done so. I'll wait for colder days to enjoy them as soon as they come out of the oven 😋

Those really do look yummy. I never flew on Midwest Airlines, sounds like I missed out on a great experience. You would think the airlines today could learn a thing or two from these kinds of stories... Now it's all about profit, and on top of that you have to wonder if a Boeing aircraft will actually stay in the sky... Flying is not what it once was unless you are very wealthy and can charter your own jet. Not likely to happen with my budget!

I used to count the plane flight as part of my vacation! I loved flying. I quit traveling by air when it was no longer fun. But on the plus side I did some incredible road trips around the US and Canada!
