Carrots are not my favorite vegetable! But carrot cake? It doesn't get much better than this!

This recipe has simple ingredients and was easy enough to put together. I even remembered to take a few pictures. Don't be fooled into thinking I'm an organized cook! That only happens when I plan ahead for pictures.

I shared a piece with a neighbor when she stopped by. Her husband recently fell down their basement stairs and broke a vertebrae in his neck and has ended up in a rehab center for 2 or 3 weeks, so she is on her own at home. She doesn't bake and always appreciates any goodies that I make and share.

I shared some with my daughter and her husband, and they thought it was really good.

The best part of baking is sharing!

Oh yes yumm!

Not being a huge fan of carrots myself, it is nice to know that we can always fall back on carrot cake for the 'vitamins' that the carrots in there give us! 😆🤣😂😅

I had never seen one like this either. The cake layers stayed pretty moist because of the carrots.

This is wonderful to prepare a carrot cake in such a simple way, it looks delicious until my mouth was watering.

I do love a good carrot 🍰 cake. My wife made a lovely lemon cake at the weekend. It was delicious. Simple, but nice and fluffy with a lemony 🍋 zang to it! 😀

When we were kids my mother always told us to eat carrots because it would give us better eyesight. That is a good reason to make this cake!

The neighbor recently turned 80. Not a good age to fall and break your neck.
